Banana Bread in the Air Fryer

Air fryer banana bread gives you a moist, golden loaf in about 40 minutes, without heating a full oven for one bake. It is the best use for spotty bananas, and it works in any 4–6 litre basket as long as the tin fits. This recipe shows which tin to choose, what temperature to use and when to put foil on top so the crust does not outrun the middle.

Why the air fryer works for banana bread

Air fryer banana bread works because a loaf tin is small enough for the fan to heat from every side. The chamber reaches temperature in a couple of minutes, so there is no long preheat and the kitchen stays cool. The trade-off is that the top of the loaf sits close to the heating element and browns quickly. Baking at 160 °C instead of the usual oven 180 °C, and covering the loaf with foil after 20 minutes, gives a golden crust and a fully cooked middle.

Tin size matters. A standard 900 g loaf tin (about 23 cm long) will not fit most 4–6 litre baskets, so use a 450 g loaf tin (about 16 cm long) or a 15 cm round tin. Many people search for this bake as banana cake, and the batter is the same: soft, damp and sweet. The riper the bananas, the better the flavour, so the black-skinned ones at the bottom of the fruit bowl are ideal.

How to make banana bread in the air fryer

Tap a time to start a timer.

  1. Prepare the tin Line a 450 g loaf tin with baking paper, letting it overhang the long sides so you can lift the loaf out. Trim the paper so it stands no more than 1 cm above the rim, because loose paper can lift in the fan.
  2. Mash and mix Mash the bananas in a large bowl until almost smooth. Whisk in the melted butter, sugar, egg and milk until combined.
  3. Fold in the flour Sift the flour and cinnamon over the bowl and fold gently until just combined. A few lumps are fine. Fold in the walnuts, spoon the batter into the tin and smooth the top.
  4. Bake Preheat the air fryer to 160 °C for . Lower the tin into the basket and cook for . Lay a piece of foil loosely over the top, pressing the edges down so the fan cannot lift it, and cook for another . The loaf is ready when a skewer in the centre comes out clean.
  5. Cool Leave the loaf in the tin for , then lift it out on the paper and cool for at least on a wire rack before slicing.

Tips

  • Use properly ripe bananas. Skins should be speckled brown or black. Underripe bananas taste starchy and make a drier loaf.
  • Do not overmix. Stir the flour in only until it disappears. Overmixing develops gluten and gives a tough, tight crumb.
  • Check early. Air fryers differ, so start testing with a skewer 5 minutes before the end. It should come out clean or with a few dry crumbs.

Serving

Cut thick slices and serve them with butter for breakfast or with a mug of tea in the afternoon. Banana bread in air fryer form is also good toasted: 3 minutes at 180 °C gives crisp edges and a soft middle. If you like single-serve bakes, try banana muffins or browse the other desserts.

Storing and reheating

Wrap the cooled loaf in baking paper or keep it in an airtight tin for up to 3 days. It also freezes well in slices for up to 3 months. To reheat a slice, put it in the air fryer at 160 °C for 2–3 minutes until warm all the way through.

Variations

  • Chocolate chip: Replace the walnuts with 60 g dark chocolate chips and bake for 2 minutes longer.
  • Banana muffins: Divide the batter between paper cases, bake six at a time at 160 °C for 15–18 minutes, or use the separate banana muffins recipe.
  • Oats and yoghurt: Swap 40 g of the flour for porridge oats and replace the milk with 2 tbsp Greek yoghurt for a slightly denser, nuttier crumb.

Troubleshooting

The top is dark but the middle is raw
The fan browns the surface quickly. Bake at 160 °C, not higher, and cover with foil after 20 minutes. Bake for 5 more minutes if the skewer still has wet batter on it.
The loaf is dense and rubbery
The batter was overmixed. Fold the flour in until just combined and stop while a few lumps remain.
The loaf sticks to the tin
Line the tin with baking paper and leave it to cool for 10 minutes before lifting the loaf out. Hot banana bread is fragile.

Frequently asked questions

How long does banana bread take in an air fryer?

About 40 minutes at 160 °C in a 450 g loaf tin, with foil on top after 20 minutes. A 15 cm round tin takes 30–35 minutes.

What temperature should banana bread be cooked at in an air fryer?

160 °C is a good setting. At 180 °C the crust sets before the middle cooks through and the loaf can sink as it cools.

Can you make banana bread in an air fryer without a tin?

It is not recommended, because the batter is too wet to hold its shape. Use a loaf tin, a foil container or a silicone loaf mould that fits the basket.

How long does it take to reheat or toast banana bread in an air fryer?

A slice warms in 2–3 minutes at 160 °C. For a toasted, crisper slice with a little butter, give it 3 minutes at 180 °C.

Can I make banana bread without egg in the air fryer?

Yes. Replace the egg with 1 extra mashed banana and 1 tbsp natural yoghurt. The loaf will be a little denser, but still moist.
