Why the air fryer works for chicken mini fillets

Chicken mini fillets in air fryer baskets are a natural fit because they are small, lean and quick. In a frying pan they can easily go grey and dry before the other side has browned. The air fryer heats them from every side, so they finish in about 10 minutes with a light golden surface and a moist middle.

Because mini fillets are so small, the margin between cooked and overcooked is only a minute or two. That is why a thermometer is useful, and why sorting them by size matters. If you search for how to cook chicken mini fillets in air fryer machines, the answer is 190 °C, a single layer and a check at 8 minutes. For thicker pieces, see chicken fillets.

How to make chicken mini fillets in the air fryer

Tap a time to start a timer.

  1. Prepare the fillets Pat the mini fillets dry. Most have a thin white tendon running along one side – hold the end of it with kitchen roll, slide a knife underneath and pull it out, or leave it in, as it softens when cooked.
  2. Season Toss the fillets in a bowl with the olive oil, paprika, garlic granules, onion granules, salt and pepper until they are evenly coated.
  3. Preheat Preheat the air fryer to 190 °C for .
  4. Cook Put the fillets in the basket in a single layer with a little space between them. Cook for , turning them over after . Very small fillets of under 30 g need only , while large ones of 60 g may need 12.
  5. Check and rest Cut one of the largest fillets open. The Food Standards Agency says chicken is safe at 75 °C for 30 seconds, with no pink meat and clear juices. Rest for and serve with the lemon wedges.

Tips

  • Sort by size. A handful of larger fillets in with small ones will be underdone when the small ones are ready.
  • Season generously. Small pieces need more seasoning per gram than a big breast, so do not be shy with the paprika and garlic.
  • Serve straight away. Mini fillets cool quickly, so have the plates ready before the timer ends.

Serving

Serve with chips and peas for a family dinner, or pile onto a salad with cherry tomatoes and cucumber. They also work as a topping for rice bowls with roasted broccoli. For a finger-food version with a crisp coating, try the chicken goujons.

Storing and reheating

Cooked mini fillets keep for up to 2 days in an airtight container in the fridge. To reheat, cook them at 160 °C for 3 minutes until they are steaming hot all the way through (75 °C). Cold fillets are also good sliced into wraps and sandwiches. Small chicken fillets in air fryer baskets should only be reheated once.

Variations

  • Lemon and thyme: Swap the paprika for the zest of 1 lemon and 1 tsp dried thyme.
  • Sticky honey glaze: Brush with 1 tbsp honey and 1 tsp soy sauce for the last 2 minutes (not gluten-free).
  • Peri-peri: Use 2 tsp peri-peri seasoning and serve with a yoghurt dip.

Troubleshooting

The mini fillets are dry
They are small and cook quickly. Start checking at 8 minutes and take them out as soon as the middle is white and 75 °C, then let them rest for 3 minutes.
The fillets are different sizes and cook unevenly
Sort them into small and large piles. Start the large ones 2 minutes earlier, or take the small ones out first.
The seasoning is pale
Add the oil first so it carries the spices, and dry the fillets well. Smoked paprika also gives a deeper colour.

Frequently asked questions

How long do chicken mini fillets take in an air fryer?

About 10 minutes at 190 °C, turned halfway. Fillets under 30 g need 8 minutes, and larger ones up to 12 minutes.

How do you cook chicken mini fillets from frozen in the air fryer?

Raw frozen mini fillets should be thawed in the fridge first. Breaded frozen mini fillets can go straight in at 200 °C for 10–12 minutes, until steaming hot at 75 °C.

Are chicken mini fillets the same as chicken breast?

They come from the same area. Mini fillets are the small strip underneath the breast, and they are more tender but need less time. For whole breasts, see the chicken breast page.

Should you remove the tendon from mini fillets?

It is optional. The tendon is edible, but it can be chewy in larger fillets. Pulling it out takes a few seconds per fillet.

What temperature should mini fillets reach?

75 °C in the centre of the largest piece. The Food Standards Agency says that is safe once held for 30 seconds.
