Vegan Corn Ribs in the Air Fryer

Corn ribs are strips of sweetcorn cut lengthways from the cob, which curl up as they cook and look a lot like ribs. Corn ribs air fryer style take about 10 minutes, with caramelised edges and a juicy bite that is easier to eat than a whole cob. They are vegan, cheap and ideal for sharing, as a snack or a barbecue side.

Why the air fryer works for corn ribs

Corn ribs air fryer batches work because the strips are thin and have a lot of surface area. Hot air chars the edges and caramelises the natural sugars within minutes, while the kernels stay juicy. The strips curl as they cook, which gives them their rib shape, and they come out with more flavour than boiled or steamed corn.

They are also easier to eat than a whole cob. You hold a strip, bite along the kernels and there is no need for skewers. A 4 litre basket holds the strips from 2 cobs in a loose single layer, and a few more cobs can be cooked in batches.

How to make corn ribs in the air fryer

Tap a time to start a timer.

  1. Soften the cobs Raw cobs are hard to cut and the knife can slip. Microwave the whole cobs for , or leave them in boiling water for , then let them cool until you can handle them.
  2. Cut the ribs Cut each cob in half across the middle. Stand each half on its flat end on a board and cut down the centre, keeping your fingers clear, then cut each half into 4 long strips so you end up with 16 ribs. Lay a damp cloth under the board to stop it sliding.
  3. Season Toss the ribs in a bowl with the oil, smoked paprika, garlic granules, cumin, chilli flakes, salt and pepper until every strip is coated.
  4. Cook Preheat the air fryer to 200 °C for . Spread the ribs in a single layer and cook for , shaking the basket after , until they curl and the edges are charred in places.
  5. Finish Squeeze the lime over the hot ribs and scatter with coriander. Serve straight away.

Tips

  • Pick fresh, plump cobs. The kernels should be tight and moist. Old, dry cobs give chewy ribs.
  • Use a sharp, heavy knife. A cook's knife or a cleaver works best. Never rock a thin knife through the cob, as it can slip.
  • Season in a bowl. Tossing the ribs in oil and spices in a bowl coats the sides evenly and avoids mess in the basket.

Serving

Serve the ribs with lime wedges and a dip such as garlic yoghurt, guacamole or sriracha mayonnaise (choose dairy-free and vegan versions to keep the dish vegan). As a snack they pair with nachos, and as a barbecue side with chicken wings or a burger. For a plainer approach, see corn on the cob.

Storing and reheating

Cooked corn ribs keep for 2 days in the fridge in a covered container. Reheat them in the air fryer at 180 °C for 3–4 minutes, until steaming hot all the way through (75 °C). They also taste good cold in a salad. Corn ribs air fryer leftovers can be sliced off the cob and stirred into rice or tacos.

Variations

  • Elote style: Brush with mayonnaise, then sprinkle with crumbled feta and chilli powder (not vegan, not dairy-free).
  • Honey and chilli: Brush with 1 tbsp honey and ½ tsp chilli flakes for the last 2 minutes (not vegan).
  • Sweet and smoky barbecue: Toss in 2 tbsp barbecue sauce after cooking and return for 1 minute.

Troubleshooting

The corn ribs are chewy
They were cooked straight from raw or for too long. Soften the cobs first and stop when the edges colour, which takes 9–11 minutes.
The ribs do not curl
The cobs were cut too thin or too fresh. Cut strips about 2 cm wide and make sure they are slightly cooked before seasoning, and spread them out in one layer.
The spices burn
Small spice particles scorch at high heat. Use plenty of oil to coat them and lower the temperature to 190 °C if the basket runs hot.

Frequently asked questions

How long do corn ribs take in an air fryer?

About 10 minutes at 200 °C, shaken halfway. Smaller strips may be ready at 8 minutes.

How do you cut corn ribs safely?

Soften the cob in the microwave for 2 minutes first, cut it in half across, stand each half on its flat end and cut down with a sharp, heavy knife on a stable board.

Can you cook frozen corn ribs in an air fryer?

Yes. Cook frozen shop-bought corn ribs at 190 °C for 12–14 minutes, shaking twice, and season once the surface has thawed.

Do you need to boil sweetcorn before air frying it?

Not for flavour, but a quick 2 minutes in the microwave or boiling water softens the cob so you can cut it, and helps the ribs curl.

Can you make corn ribs without oil?

They will cook, but they may dry out. A tablespoon of oil keeps them juicy and helps the spices stick.
