Cottage Pie in the Air Fryer

Cottage pie is a comfort food, but a full-sized one means an hour in a hot oven. An air fryer cottage pie for two uses a small dish, so the mash browns and crisps in about 15 minutes. The beef filling is made in a pan first, then the air fryer does the browning and heats it right through.

Why the air fryer works for cottage pie

An air fryer cottage pie is a clever way to cook for one or two. A full oven takes a long time to heat for a small dish, and the top often dries out before the filling is hot. In the air fryer the fan circulates hot air over the mash, so the ridges turn crisp and golden in 15 minutes while the filling stays moist underneath.

It is worth being honest about the limits. The filling is made in a frying pan, because the basket cannot brown mince and make a sauce. The air fryer does the second half of the job: heating the pie through and browning the top. The dish must fit the basket, so this recipe uses an 18 cm dish for two portions. For larger families, the oven is still easier.

How to make cottage pie in the air fryer

Tap a time to start a timer.

  1. Make the mash Boil the potatoes in salted water for until soft. Drain well, let the steam escape for , then mash with the butter, milk, salt and pepper. Dry mash browns better than wet mash.
  2. Cook the filling While the potatoes boil, heat the oil in a frying pan. Fry the onion and carrot for , add the mince and brown it for . Stir in the tomato purée and flour, then the stock, Worcestershire sauce and thyme. Simmer for until thick, and season.
  3. Assemble Spoon the filling into an ovenproof dish about 18 cm across that fits your basket. Cover with the mash, spread it to the edges and drag a fork across the top to make ridges. Scatter over the cheese.
  4. Cook Preheat the air fryer to 180 °C for . Lower the dish in, using a foil sling or oven gloves, and cook for until the top is golden and the edges bubble.
  5. Check and rest The filling must be steaming hot all the way through. The Food Standards Agency says food is safe at 75 °C for 30 seconds, so check with a thermometer in the middle. Rest for before serving.

Tips

  • Cool the filling slightly. Hot filling makes the mash sink. Leave it for 5 minutes before topping.
  • Make deep ridges. Fork lines catch the hot air and give crisp peaks. A thin layer of grated cheese on top also helps browning.
  • Use a foil sling. A strip of foil folded under the dish makes it easy to lift out of the hot basket.

Serving

Serve the pie with peas, green beans or roasted carrots, and a spoonful of gravy. Cottage pie in air fryer dishes also reheat well, so cooking a double batch of filling and freezing half saves time. For a similar comfort dish, try lasagne in the air fryer.

Storing and reheating

Cooled leftovers keep for 2 days in the fridge, or for 3 months in the freezer. To reheat cottage pie in the air fryer, cover the dish loosely with foil and heat at 160 °C for 10–12 minutes, removing the foil for the last 3 minutes. It must be steaming hot all the way through, at 75 °C in the middle, and should only be reheated once.

Variations

  • Shepherd's pie: Replace the beef with lamb mince and add 1 tsp dried rosemary. The method is the same.
  • Extra vegetables: Stir 50 g frozen peas into the filling or add a diced celery stick with the onion.
  • Sweet potato top: Use sweet potato for half the mash. It browns faster, so check the top after 10 minutes.

Troubleshooting

The mash top is pale
The mash was too wet or too smooth. Drain the potatoes well, make deep ridges with a fork and brush the top with a little melted butter before cooking.
The filling is watery
The mince was not cooked down enough. Simmer the sauce until it coats the back of a spoon, as it will not reduce further under the mash.
The dish does not fit or the top burns
Choose a dish that leaves 2 cm of space on every side. If the mash browns too quickly, cover it loosely with foil for the last 5 minutes.
