Mug Cake in the Air Fryer

A mug cake is a single portion of warm, gooey sponge made in one dish with a spoon. In the air fryer it bakes gently from all sides, so it rises more evenly than in the microwave and gets a lightly crisp top. This air fryer mug cake takes 5 minutes to mix and about 12 minutes to bake.

Why the air fryer works for a mug cake

An air fryer mug cake is a small, forgiving bake. The warm air moves around the mug, so the cake rises evenly and the top browns lightly, while a microwave only steams it from the inside. It is also a good use of a machine that is already warm, and you do not have to switch on a full oven just for one portion.

The key point is the dish. The mug must be ovenproof, free of metallic decoration and small enough to sit in the basket without touching the walls. Stoneware or glass mugs and ceramic ramekins are the safest choices. If you only own thin novelty mugs, use a ramekin. The handle should not hit the top of the machine either, so test the fit before you mix.

How to make a mug cake in the air fryer

Tap a time to start a timer.

  1. Choose the right mug Use an ovenproof mug or ramekin, with no metallic decoration, that holds at least 300 ml and fits in the basket with a little space around it. A tall straight-sided mug works better than a wide shallow one. If you are not sure it is oven-safe, use a ramekin or a small metal tin instead.
  2. Mix the dry ingredients Put the flour, sugar, cocoa powder and salt in the mug and stir with a fork until there are no lumps. Make a little well in the middle.
  3. Add the wet ingredients Add the egg, milk, oil and vanilla and beat well with the fork, scraping the corners, until the batter is smooth. Stir in the chocolate chips. The mug should be no more than two-thirds full, as the cake rises.
  4. Bake Preheat the air fryer to 160 °C for . Stand the mug in the basket and bake for . The top should look set and spring back lightly, and a skewer should come out with a few moist crumbs. Add if the middle is still liquid.
  5. Rest and serve Take the mug out using oven gloves, as it will be very hot, and leave it for . Eat straight from the mug, or run a knife round and turn it out onto a plate.

Tips

  • Use a fork, not a whisk. You only need to mix until smooth, and a fork reaches into the corners of the mug.
  • Do not overfill. Leave a third of the mug empty so the cake has room to rise and does not spill into the basket.
  • Eat it warm. The cake is at its best in the first 10 minutes. As it cools, it becomes firmer and drier.

Serving

Top the mug cake with a scoop of vanilla ice cream, whipped cream, or a spoonful of chocolate spread. Fresh raspberries cut through the sweetness. For a larger bake, try a chocolate cake or a tray of muffins instead.

Storing and reheating

Mug cakes are meant to be eaten straight away and do not keep well. If you have leftovers, cover the mug and keep it in the fridge for 1 day. To reheat, put the mug in the air fryer at 150 °C for 2–3 minutes, until warm throughout. It is quicker to make a fresh one than to rescue a stale one.

Variations

  • Banana and peanut butter: Replace 2 tbsp of the milk with mashed ripe banana and add 1 tbsp peanut butter.
  • Lemon mug cake: Leave out the cocoa, add 2 tbsp extra flour and the zest and juice of half a lemon.
  • Gooey centre: Press a square of dark chocolate or a teaspoon of jam into the middle of the batter before baking.

Troubleshooting

The mug cake is rubbery
The batter was overmixed or baked for too long. Stir only until smooth and start checking at 10 minutes.
The cake rose over the top of the mug
The mug was too full. Fill it no more than two-thirds, or use a taller dish.
The top is dry but the centre is raw
Cover the mug with foil, tucked firmly around the rim so it cannot lift in the fan, for the first 8 minutes and lower the heat to 150 °C.

Frequently asked questions

How long does a mug cake take in an air fryer?

About 12 minutes at 160 °C for a 300 ml mug. A wider ramekin may need only 10 minutes.

Can I make an air fryer mug cake without egg?

Yes. Replace the egg with 3 tbsp extra milk and ½ tsp baking powder. The cake will be a little denser but still soft.

Can I use a cake mix?

Yes. Mix 4 tbsp of dry cake mix with 3 tbsp water and bake as above for 10–12 minutes.

What mug can I put in an air fryer?

Only ovenproof ceramic or glass mugs without metallic paint. A ramekin is the safest choice if you are unsure.

Is it better than a microwave mug cake?

The air fryer takes longer, but the texture is lighter and the top browns slightly, instead of steaming.
