Buffalo Wings in the Air Fryer

Good buffalo wings need two things that rarely go together, a really crisp skin and a sauce that clings instead of turning everything soggy. The air fryer takes care of the first part with very little fat, and a quick toss in melted butter and hot sauce at the end takes care of the second. You get proper pub-style wings in about 25 minutes, with no deep fryer and no mess.

Why the air fryer works for buffalo wings

Buffalo wings in air fryer baskets get the crunch that traditionally comes from deep frying. Wings have a lot of fat under the skin, and the circulating hot air renders it out so the skin turns thin and crisp while the meat stays juicy. The fat drips through the basket, so you do not need a pan of hot oil, and the kitchen stays far cleaner.

The sauce is what makes them buffalo wings: a simple mix of hot pepper sauce and melted butter, added at the end. Adding it after cooking, not before, is the trick. Sauce on raw wings would burn in the hot air and steam the skin soft. This page covers wings tossed in a sauce; for a dry-spiced version without a glaze, see chicken wings in the air fryer.

How to make buffalo wings in the air fryer

Tap a time to start a timer.

  1. Dry and season the wings Pat the wings very dry with kitchen roll. Toss them in a bowl with the oil, baking powder, salt, smoked paprika and garlic granules until every wing has a thin, even coating. The baking powder helps the skin blister and crisp up.
  2. Preheat Heat the air fryer to 200 °C for . A hot basket starts crisping the skin straight away.
  3. Cook the wings Put the wings in the basket in a single layer with a little space between them. Cook for , shaking the basket or turning the wings with tongs after . If your basket is small, cook in two batches and keep the first batch warm.
  4. Make the sauce While the wings cook, melt the butter in a small pan over a low heat. Stir in the hot sauce, vinegar, honey if using, and a pinch of salt. Keep it warm but do not boil it.
  5. Check the temperature The Food Standards Agency says chicken is safe once it has reached 75 °C for 30 seconds, with no pink meat and clear juices. Push a thermometer into the thickest part of a drumette, away from the bone. The skin should be deep golden and crisp.
  6. Toss and rest Tip the hot wings into a large bowl, pour over the sauce and toss until glossy. Leave them for so the sauce settles onto the skin, then serve with celery and the dip.

Tips

  • Split the wings if you can. Drumettes and flats cook evenly and fit the basket better than whole wings. Keep the wing tips and freeze them for stock.
  • Warm the bowl. Toss the wings in a bowl that has been warmed with hot water, so the butter in the sauce does not set the moment it touches the wings.
  • Adjust the heat. The sauce above is medium. For a milder wing use 40 ml hot sauce and a little more butter; for a hotter one add a pinch of cayenne pepper.

Serving

Serve the wings in a big bowl with celery sticks, carrot batons and a cool dip such as soured cream and chives or blue cheese dressing. They suit a match-day spread with potato wedges or chips, and a pile of napkins. If you want more finger food, add chicken nuggets to the table. Buffalo wings in air fryer batches are best eaten straight away, so cook the sides first.

Storing and reheating

Leftover wings keep for up to 2 days in an airtight container in the fridge. Reheat them in the air fryer at 180 °C for 5–6 minutes, shaking the basket once, until they are steaming hot all the way through (75 °C in the centre). The microwave makes the skin rubbery, so avoid it if you can.

Variations

  • Honey and hot: Increase the honey to 1 tbsp for a sticky, sweet-hot glaze, and return the wings to the basket for 2 minutes at 200 °C.
  • Garlic parmesan: Skip the hot sauce and toss the wings in melted butter, crushed garlic and finely grated parmesan.
  • Cauliflower wings: Toss cauliflower florets in seasoned flour and cook at 200 °C for 12–15 minutes, then coat in the sauce. See cauliflower in the air fryer for timings. Use oil in place of butter and leave out the honey to keep it vegan.

Troubleshooting

The wings are soggy after saucing
Sauce them only when they come out of the basket and eat within a few minutes. For extra crunch, put the sauced wings back in at 200 °C for 2 minutes to set the glaze.
The skin is not crisp
The wings were damp or the basket was crowded. Dry them thoroughly, use the baking powder and keep them in a single layer so the hot air reaches every side.
The sauce splits and looks greasy
It was too hot or you used too much butter. Melt the butter gently, whisk in the hot sauce off the heat and keep the ratio at roughly 1 part butter to 1 part sauce.

Frequently asked questions

How long do buffalo wings take in an air fryer?

About 25 minutes at 200 °C, turned halfway, for fresh wings. Wings split into drumettes and flats cook a little faster than whole wings, which can need 28–30 minutes.

Can you cook frozen buffalo wings in the air fryer?

Yes. Cook plain frozen wings at 180 °C for 10 minutes, then at 200 °C for 15–18 minutes, shaking twice. Pre-sauced frozen wings follow the packet, usually 200 °C for 18–22 minutes. Check that the thickest wing reaches 75 °C.

Do I need baking powder for crispy air fryer buffalo wings?

It is not essential, but it makes a noticeable difference to the skin. Without it, dry the wings very well and add an extra 3–4 minutes.

How do I reheat buffalo wings in the air fryer?

Heat them at 180 °C for 5–6 minutes, shaking once, until steaming hot all the way through. Add a spoonful of fresh sauce afterwards if they look dry.

Are boneless buffalo wings cooked the same way?

Boneless wings are usually breaded pieces of chicken breast. Cook them at 190 °C for 10–12 minutes, then toss them in the sauce, and check that they reach 75 °C.
