Why the air fryer works for chicken nuggets
Chicken nuggets in air fryer baskets get their crunch from circulating hot air rather than a pool of oil. The crumb coating dries and browns quickly, while the chicken inside steams in its own juices. A conventional oven needs 20 minutes and often leaves the underside soft, and frying uses far more oil than most people want in the house.
Air fryer chicken nuggets are also a good way to use a pack of frozen ones straight from the freezer. The time is shorter than in the oven, there is no need to preheat a big cavity, and the results are crisper on all sides. Homemade ones take longer to prepare, but you control the seasoning and what goes into them.

Tips
- Press the crumbs on firmly. A light tap is not enough. Squeezing the panko on gives a thick, even crust that holds during cooking.
- Use a single layer. Nuggets that touch each other stay soft where they meet, so cook two batches if you need to.
- Test the biggest piece. Check the largest nugget for doneness, because the large ones take longest.
Serving
Serve nuggets with chips or sweet potato fries and a pot of ketchup, barbecue sauce or honey mustard. For a lunchbox, pack them cold with cucumber sticks. The same method works for chicken bites and chicken goujons, which have a different shape and coating. Frozen chicken nuggets in air fryer baskets take about the same time as the homemade ones.
Storing and reheating
Keep leftover nuggets in an airtight container in the fridge for up to 2 days. To reheat, spread them out in the basket and cook at 180 °C for 3–4 minutes until crisp and steaming hot all the way through (75 °C). Uncooked, coated nuggets freeze well on a tray for up to 3 months.
Variations
- Parmesan crumb: Replace 20 g of the panko with 20 g finely grated parmesan (not dairy-free).
- Spicy nuggets: Add 1 tsp cayenne or chilli powder to the flour.
- Sesame crunch: Stir 2 tbsp sesame seeds into the panko and serve with sweet chilli sauce.
Troubleshooting
- The crumb coating falls off
- The chicken was wet when it was floured. Dry it well, press the panko on firmly and do not move the nuggets for the first 3 minutes of cooking.
- The nuggets are pale and dry on top
- The crumbs need a little fat to brown. Spray the surface evenly with oil and preheat the air fryer so the coating crisps right away.
- The nuggets are dry inside
- Pieces that are too small overcook. Keep them about 3 cm wide, check one at 8 minutes and take them out at 75 °C.
