Okra in the Air Fryer
Okra has a reputation for being slimy, but the air fryer's dry heat takes care of that. Okra in air fryer baskets cooks in about 12 minutes with crisp edges and a tender middle, and uses a fraction of the oil of deep-fried okra. This page shows a simple spiced version with a light cornmeal coating, plus times for whole pods and frozen okra.

Why the air fryer works for okra
Okra releases a sticky mucilage when it is cut and cooked slowly with moisture, which is what many people dislike. Okra in air fryer baskets avoids this because the hot air dries the surface quickly, so the slime does not have time to develop. The edges crisp, the seeds inside stay soft, and the flavour becomes grassy and slightly nutty.
The dry spiced coating here is closer to Indian bhindi fry than Southern fried okra. It uses a little cornmeal for crunch and gram flour to help it stick. If you prefer the classic Southern style, dip the pods in buttermilk, then in seasoned cornmeal. Fried okra in air fryer baskets works best in a single layer, so a 5–6 litre machine will handle 400 g at once.

- Serve Add lemon juice if you did not use amchur, and serve straight away while hot and crisp.

Tips
- Choose small pods. Pods under 10 cm are tender. Large, woody ones stay tough.
- Cut at the last minute. The more cut surface that sits around, the more sticky liquid there is.
- Serve at once. Okra is crispest straight out of the basket and softens as it cools.
Serving
Serve the okra as a snack with a yoghurt and mint dip, or as a side with dal and rice, or alongside chickpeas for a vegetarian curry night (or chicken thighs if you eat meat). The spices also suit a bowl of sweet potatoes. For more timings see the air fryer cooking times chart.
Storing and reheating
Cooked okra keeps for 2 days in an airtight container in the fridge, though it loses its crunch. Reheat in the air fryer at 180 °C for 3–4 minutes, until crisp and steaming hot. Fresh, unwashed okra keeps for 3–4 days in the fridge in a paper bag.
Variations
- Southern-style fried okra: Dip slices in buttermilk, then seasoned cornmeal, spray with oil and cook at 200 °C for 10–12 minutes. This version is vegetarian but not vegan or dairy-free.
- Whole pods with garlic: Toss whole small pods in oil, garlic granules and salt, and cook for 12–15 minutes.
- Chaat masala: Finish the hot okra with a sprinkle of chaat masala and a squeeze of lime for a tangy street-food flavour.
Troubleshooting
- The okra is slimy
- Wet pods or crowding. Dry the okra thoroughly, cut it just before cooking, preheat the basket and use a single layer so the steam can escape.
- The coating comes off
- Coat the okra in oil first so the dry mix sticks. Shake gently rather than stirring with a spoon.
- The okra is dry and tough
- The pods were large and old. Choose small pods under 10 cm and shorten the time by 2 minutes for thin slices.
Frequently asked questions
How long does okra take in an air fryer?
Sliced fresh okra takes 10–12 minutes at 200 °C. Whole small pods take 12–15 minutes, shaken halfway.
Can you cook frozen okra in the air fryer?
Yes, straight from frozen at 200 °C for 12–15 minutes, shaking every 4 minutes. Frozen okra is already cut, so it is a quick option. Breaded frozen okra takes 10–12 minutes.
How do you make okra in the air fryer without breading?
Toss it in a little oil and salt and cook at 200 °C for 10–12 minutes. The pods roast and char, with less crunch but a pleasant flavour.
How do you stop okra getting slimy?
Keep it dry, cut it just before cooking, cook at a high temperature and avoid overcrowding. An acid such as lemon juice or amchur also helps.
