Tortilla Pizza in the Air Fryer

A tortilla makes a thin, crisp pizza base in minutes with no dough, no proving and no waiting. In the air fryer a tortilla pizza is ready in about 6 minutes, the cheese is bubbling and the edges are crunchy like a cracker. It suits a single lunch, a quick snack or an easy dinner for children who want to choose their own toppings.

Why the air fryer works for tortilla pizza

Tortilla pizza air fryer cooking is quicker than almost any other pizza method, because the base is already thin and fully cooked. All the machine has to do is melt the cheese and crisp the wrap. The hot air does this evenly, and the thin edge turns crunchy while the centre stays chewy under the toppings.

It is also a small, flexible meal. One tortilla makes one pizza, so everyone can choose their own toppings, and you can cook them one after another without heating a large oven. The results are best with thin wraps: very thick or soft ones turn tough. For a thicker, doughy pizza, see pizza in the air fryer, which covers fresh dough and frozen pizzas.

  1. Prepare the base Prick each tortilla a few times with a fork so that it does not puff up. Brush the edges lightly with the olive oil.
  2. Pre-crisp Preheat the air fryer to 180 °C for . Put one tortilla in the basket and cook it for , to set the base. This stops the tortilla from going soft under the sauce.
  3. Add the toppings Spread 1½ tbsp of passata over the base, leaving a 1 cm border. Sprinkle with a pinch of oregano, half the mozzarella, then the pepper and olives.
  4. Cook Return the pizza to the basket and cook at 180 °C for , until the cheese is melted and bubbling and the edge is golden. Keep an eye on it from , as the thin edge colours quickly.
  5. Rest and repeat Slide the pizza out with a spatula and let it rest for so the cheese sets. Cook the second tortilla pizza in the same way.

Tips

  • Pre-crisp the base. One minute alone in the hot basket sets the tortilla and keeps it crisp under the sauce.
  • Keep it light. A thin layer of sauce, a small handful of cheese and 2–3 toppings is plenty. Anything heavier makes the middle soft.
  • Use pre-cooked toppings. Fresh raw meat will not cook through in 5 minutes, so choose ham, cooked chicken, peppers, mushrooms, sweetcorn or olives. Cooked meat toppings must be steaming hot, 75 °C.

Serving

Cut the pizza into wedges and serve with a green salad or a bowl of broccoli. For a family meal, make a tortilla pizza for each person and put out bowls of toppings, or serve alongside chicken nuggets and potato wedges. The same method works for a breakfast version with eggs and spinach.

Storing and reheating

Tortilla pizza is best eaten straight away, as the base softens in the fridge. Leftover slices keep for 1 day in an airtight container. Reheat them in the air fryer at 160 °C for 2–3 minutes, until crisp and steaming hot all the way through (75 °C).

Variations

  • Pizza pockets: Fill half a tortilla with sauce and cheese, fold it over, press the edges and brush with oil. Cook for 5–6 minutes at 190 °C, turning halfway.
  • Pizza roll-ups: Spread a tortilla with sauce, top with cheese and roll up tightly. Brush with oil, cook for 6–7 minutes at 190 °C and slice.
  • Ham and pineapple: Use 2 slices of chopped ham and 2 tbsp of drained pineapple for a classic combination (not vegetarian).

Troubleshooting

The tortilla lifts and the toppings slide off
Press it flat with a fork-pricked base, and use a trivet or a small oven-safe rack on top for the first minute. Do not overload it with toppings.
The base is soggy
There was too much sauce or wet topping. Pre-crisp the tortilla for a minute, use 1½ tbsp of passata only and pat tinned toppings dry.
The edge is burnt but the cheese has not melted
Lower the heat to 170 °C and add 1 minute. Grating the cheese finely helps it melt faster.
