Carrot Fries in the Air Fryer

The air fryer dries the surface quickly, and a light cornflour coating gives you sweet, lightly crisp edges and a tender middle. Carrot fries air fryer style take 15 minutes and are a good way to get children, and adults, to eat more vegetables.

Why the air fryer works for carrot fries
Carrot fries air fryer style work because the machine removes surface water so quickly. In the oven, carrot sticks release moisture slowly and often steam in their own juices on the tray. In the air fryer, hot air constantly blows that moisture away, so the surface can dry, brown and develop some crispness while the inside stays tender.
The natural sugar in carrots caramelises as the edges brown, which gives the fries a sweeter, nuttier flavour than potato chips. Cutting them evenly and adding a little cornflour does the rest. Carrot chips air fryer recipes are also simple enough for children to help with, since there is no batter and only a few ingredients.

Tips
- Cut them thinner than you think. Sticks about 1 cm across crisp well. Thicker carrots stay soft in the middle and need longer, which risks burnt ends.
- Do not overcrowd. The sticks need space for the hot air to reach every side. If they pile up, cook in two batches and keep the first batch warm while the second cooks.
- Season after cooking too. A pinch of salt while the fries are hot clings better than salt added in advance, which draws out water.
Serving
Serve the fries with garlic yoghurt, hummus or sweet chilli sauce as a snack, or alongside a hamburger instead of chips. They also work next to chicken nuggets for children, or beside other roasted vegetables such as carrots cooked in larger pieces. If you want a comparison, try them next to sweet potato fries, which are slightly softer.
Storing and reheating
Carrot fries are best eaten straight away, because they soften as they cool. Leftovers keep in an airtight container in the fridge for up to 2 days. Reheat them in the air fryer at 180 °C for 3–4 minutes, until steaming hot all the way through. They will not return to full crispness, but the flavour stays good.
Variations
- Parmesan carrot fries: Sprinkle 2 tbsp finely grated parmesan over the fries for the last 2 minutes of cooking. This version is not vegan, and parmesan is not vegetarian either unless labelled so.
- Spiced: Replace the paprika with 1 tsp ground cumin and ½ tsp ground coriander for a warmer, more Middle Eastern flavour.
- Honey and thyme: Drizzle 1 tsp honey over the hot fries with a pinch of dried thyme. The honey makes them no longer vegan.
Troubleshooting
- The carrot fries are limp
- Too much water or too many sticks in the basket. Dry the carrots well, add the cornflour and cook in a single layer. Thin sticks crisp better than thick ones.
- The ends burn before the middle is cooked
- Carrots contain natural sugar, which browns quickly. Cut sticks of an even thickness, and lower the heat to 180 °C if your air fryer runs hot.
- The coating is patchy and white
- The sticks were too dry on the surface for the cornflour to cling. Add the oil first, then the cornflour, and toss until it disappears into the oil.
Frequently asked questions
How long do carrot fries take in an air fryer?
Sticks 1 cm thick take about 15 minutes at 190 °C, shaken every 5 minutes. Thin shoestring sticks need 10–12 minutes and thick wedges 18–20 minutes.
Can you make carrot fries without oil?
Yes, a very light spray is enough, or none at all. Without oil the edges stay a little drier and paler, and the seasoning does not stick as well.
Do you need cornflour for carrot chips in the air fryer?
It is not essential, but it absorbs surface moisture and helps the sticks crisp. Without cornflour they are softer and sweeter, like roasted carrot.
What temperature is best for carrot fries in the air fryer?
190 °C gives browned edges without burning the natural sugars. Go to 200 °C only for the last 2 minutes if you want extra crunch.
