Chicken Drumsticks in the Air Fryer

Drumsticks are cheap, easy to eat with your hands and very forgiving, but in the oven the skin often stays soft while the meat takes an hour. In the air fryer they come out with crisp, golden skin in around 22 minutes, with dark meat that stays juicy right down to the bone. This page gives the timings by size, the frozen method and a simple BBQ glaze.

Why the air fryer works for chicken drumsticks

Chicken drumsticks in air fryer baskets suit the machine well. A drumstick is a compact, even shape with a layer of fat under the skin, and the fast-moving hot air melts that fat and crisps the skin all the way round. The dark meat around the bone is also hard to overcook, so you get tender meat that pulls cleanly off the bone.

They are also quicker than the oven. A tray of drumsticks needs 40 minutes or more at 200 °C, while the air fryer does the same job in about 22 minutes with no preheating of a large oven. Drumsticks are a narrower cut than the whole leg, which means they cook faster, and that makes them a better choice for a weeknight. If you want to cook the whole leg with the thigh attached, see chicken legs in the air fryer, and for boneless dark meat see chicken thighs.

How to make chicken drumsticks in the air fryer

Tap a time to start a timer.

  1. Dry the drumsticks Take the drumsticks out of the fridge before cooking and pat them completely dry with kitchen roll. Dry skin is what makes them crisp.
  2. Season Rub the oil over the drumsticks, then coat them with the paprika, garlic granules, onion granules, salt and pepper. Make sure the seasoning gets to the thin end of the bone as well.
  3. Preheat and load Heat the air fryer to 190 °C for . Place the drumsticks in the basket in a single layer, with the thicker ends towards the outside where it is hottest. Do not stack them; cook in two batches if they will not fit.
  4. Cook Cook for , turning the drumsticks over after . Large drumsticks over 150 g may need .
  5. Check and rest The FSA says chicken is safe at 75 °C for 30 seconds, with no pink meat and clear juices. Push a thermometer into the thickest part, away from the bone. Dark meat is more tender at 80–85 °C, so a few extra minutes does no harm. Rest for , then serve with lemon wedges.

Tips

  • Choose similar sizes. Drumsticks sold in one pack can vary by 40 g or more. Put the largest ones at the edge of the basket, and check the smallest first.
  • Score the thick end. Two shallow cuts on the meaty part let the heat in, which helps the thickest part reach 75 °C at the same time as the thin end.
  • Cook the sides in the gaps. Once the drumsticks are out and resting, use the hot air fryer for potato wedges or corn on the cob.

Serving

Serve the drumsticks with coleslaw, corn on the cob and chips for a relaxed family dinner, or pile them on a platter for a picnic or party. They are just as good cold the next day. Chicken drumstick air fryer recipes also work well in a lunchbox, because the bone makes a handy handle.

Storing and reheating

Cooked drumsticks keep for up to 3 days in an airtight container in the fridge. To reheat, put them in the air fryer at 180 °C for 6–8 minutes, until they are steaming hot all the way through (75 °C in the centre). Cool leftovers within an hour of cooking, and do not reheat them more than once.

Variations

  • BBQ drumsticks: Mix 3 tbsp barbecue sauce with 1 tsp honey and brush it on for the last 4 minutes at 180 °C. Cook the glaze until sticky, not black. Check the label if you need it gluten-free.
  • Piri-piri: Replace the paprika with 1 tbsp piri-piri seasoning and the juice of half a lemon.
  • Honey and soy: Toss the cooked drumsticks in 2 tbsp soy sauce, 1 tbsp honey and a little grated ginger. This version is not gluten-free.

Troubleshooting

The skin is rubbery, not crisp
The drumsticks were wet or crowded in the basket. Pat them dry, use only a thin film of oil and leave a gap between each one. Finish with 2 extra minutes at 200 °C.
The meat is still pink near the bone
The drumsticks were thick or still cold from the fridge. Cook them for 4–5 more minutes and check again with a thermometer. Near the bone, 75 °C is the minimum, and it is normal for the bone itself to look slightly dark.
The BBQ glaze burns
Sugary sauces catch in the hot air. Brush the glaze on for the last 3–4 minutes only, and lower the heat to 180 °C.

Frequently asked questions

How long do chicken drumsticks take in an air fryer?

About 22 minutes at 190 °C for average drumsticks of 120 g, turned halfway. Small ones take 18–20 minutes and large ones 25–27 minutes. Always check for 75 °C inside.

What temperature should chicken drumsticks be in the air fryer?

Cook them at 190 °C for crisp skin and an even cook. At 200 °C they are quicker, about 18–20 minutes, but the skin can darken before the middle is done.

Can you cook chicken drumsticks from frozen in the air fryer?

Yes. Cook them at 180 °C for 30–35 minutes, turning twice, and add the seasoning after the first 10 minutes. Frozen drumsticks must reach 75 °C in the thickest part.

Do I need to use baking powder or flour for crispy drumsticks?

No, but a light dusting helps. Mix 1 tsp aluminium-free baking powder into the seasoning for extra crunch, or toss the drumsticks in a spoonful of plain flour with the spices (not gluten-free).

Can I cook drumsticks and thighs together?

Yes, but thighs take a little longer. Start the thighs 3–4 minutes first, or take the drumsticks out as soon as they reach 75 °C.
