Chicken Fajitas in the Air Fryer

Fajitas are meant to be quick, but the frying pan version means standing over spitting oil and cooking in several batches. Air fryer fajitas cook the chicken, peppers and onion together in one basket in about 14 minutes, with charred edges and very little oil. You get a proper sizzling filling and warm tortillas without the pan.

Why the air fryer works for fajitas

Fajitas depend on high heat and a bit of char, which is hard to get at home without a very hot pan and a lot of smoke. Making air fryer fajitas gives you the same effect: the fast hot air blisters the edges of the peppers and onions while the chicken browns on the outside and stays juicy inside. Everything cooks together in one basket, so there is no batch frying and very little washing up.

Chicken fajitas in air fryer baskets are also easy to adjust. The spice mix is a handful of store-cupboard ingredients, the vegetables can be whatever you have, and the whole filling is ready in under 15 minutes. Cutting the strips to an even width is the main thing that matters, since it lets the chicken and vegetables finish together.

  1. Mix the seasoning Combine the paprika, cumin, garlic granules, oregano, chilli powder and salt in a large bowl with the oil and the juice of half the lime.
  2. Slice and coat Cut the chicken across the grain into strips about 1.5 cm wide. Slice the peppers and onion into strips of a similar width. Toss everything in the spice mix until evenly coated.
  3. Cook Preheat the air fryer to 200 °C for . Spread the chicken and vegetables in the basket, leaving gaps, and cook for , shaking the basket after 5 and . Use two batches in a small air fryer.
  4. Check the chicken Cut open the thickest strip. The Food Standards Agency says chicken is safe at 75 °C for 30 seconds, with no pink meat and clear juices. The peppers should be soft with dark edges.
  5. Warm the tortillas Wrap the tortillas in foil and warm them in the air fryer for at 160 °C. Fill with the chicken mixture, soured cream, coriander and a squeeze of the remaining lime.

Tips

  • Cut across the grain. Slicing the chicken against the fibres gives tender strips that do not turn stringy.
  • Do not overfill the basket. A single layer of strips gets charred edges; a heap steams. Cook in two rounds if you need to.
  • Warm the tortillas last. They take only a minute or two in the hot air fryer, so do them while the chicken rests.

Serving

Bring the filling to the table with soured cream, grated cheddar, guacamole and a simple tomato salsa so everyone can fill their own wraps. For a more substantial meal, serve alongside potato wedges or rice. If you want a snack for a crowd, spoon the filling over nachos with plenty of cheese.

Storing and reheating

Keep the cooked filling in an airtight container in the fridge for up to 2 days, and store the tortillas separately. Reheat the filling in the air fryer at 180 °C for 4–5 minutes until steaming hot all the way through (75 °C). Reheated chicken fajitas in air fryer baskets stay far crisper than they do in the microwave.

Variations

  • Prawn fajitas: Swap the chicken for raw king prawns and cook for 5–6 minutes, until pink and opaque.
  • Vegetable only: Use extra peppers, mushrooms and a drained tin of black beans. Cook for 12 minutes (the tortillas and soured cream are vegetarian).
  • Smoky chipotle: Add 1 tsp chipotle paste to the oil for a deeper, smokier flavour.

Troubleshooting

The chicken is dry
Strips cut thinner than 1 cm overcook quickly. Cut them 1.5 cm wide, use thighs for extra forgiveness and take the batch out as soon as it reaches 75 °C.
The peppers are soggy, not charred
The basket was too full or the vegetables were wet. Cook in a single layer, dry the peppers well and shake the basket during cooking.
The spices have burned and taste bitter
Use oil to carry the spices and keep the temperature at 200 °C. A thin coating of oil is enough.

Frequently asked questions

How long do chicken fajitas take in an air fryer?

Chicken strips with sliced peppers and onion take about 14 minutes at 200 °C, shaken twice. Thinner strips may be ready after 10–12 minutes, so check early.

Can you cook frozen chicken fajitas in the air fryer?

Frozen fajita strips can be cooked straight from the freezer at 190 °C for 12–15 minutes, shaking every 5 minutes. Frozen vegetables work too, but they release water, so cook them for the first 5 minutes without the chicken.

How do you reheat chicken fajitas in the air fryer?

Put the cold filling in the basket at 180 °C for 4–5 minutes, shaking once, until steaming hot all the way through (75 °C). Warm the tortillas separately for 1 minute so they do not dry out.

Can you use chicken thighs for fajitas?

Yes. Boneless, skinless thigh strips stay juicier and need 1–2 minutes longer than breast. The safe temperature is the same, 75 °C.
