Halloumi in the Air Fryer
Halloumi is the cheese that survives heat, but in a frying pan it often sticks, splutters and ends up pale on one side and burnt on the other. The air fryer browns both sides at once with only a thin film of oil, so you get squeaky-soft centres and golden, lightly crisp edges in about 8 minutes. This page covers classic slices and, further down, proper halloumi fries with a crunchy crumb.

Why the air fryer works for halloumi
Cooking halloumi air fryer style works because the cheese has a very high melting point. Instead of collapsing into a puddle, it softens, steams gently inside and browns on the outside, and the moving hot air does the browning on every surface without any babysitting. You use a teaspoon of oil rather than a pan's worth, nothing spits across the hob, and the whole job takes about the same time as heating a frying pan.
The method is also forgiving. Halloumi in air fryer baskets cooks evenly whether you cut it into slices for a salad, cubes for skewers or sticks for fries. The two things that matter are patting the cheese dry and serving it quickly, because it firms up and turns squeaky as it cools.
How to make halloumi in the air fryer
Tap a time to start a timer.
- Slice the halloumi Drain the block and pat it dry with kitchen roll, as surface moisture stops browning. Cut it into slices about 1 cm thick, which gives roughly 8–9 slices from a 225 g block.
- Oil lightly Brush both sides of each slice with the olive oil and sprinkle over the oregano or chilli flakes. Halloumi is already salty, so you do not need to add any salt.
- Preheat Heat the air fryer to 200 °C for . A hot basket sets the surface straight away, which stops the cheese sticking.
- Cook Lay the slices in a single layer, leaving a little space between them. Cook for at 200 °C, turning them over after . Thinner slices of 0.5 cm need only .
- Serve at once The halloumi is ready when both sides are deep golden and the edges have darkened slightly. Serve straight away with lemon wedges and a drizzle of honey, because it turns rubbery as it cools.

Tips
- Pat it dry first. Halloumi is packed in brine and a wet surface steams instead of browning. A minute with kitchen roll makes a visible difference to the colour.
- Cut slices of equal thickness. Aim for 1 cm so they finish together. Slices thinner than 0.5 cm turn crisp and chewy rather than soft.
- Do not overlap the slices. Cheese that touches stays pale and can fuse together. Cook in two batches if your basket is small.
Halloumi fries
Halloumi fries air fryer style are the version most people come for, and they need a slightly different approach. Cut a 225 g block lengthwise into 8–10 sticks about 1.5 cm thick and pat them dry. Toss them in 2 tbsp cornflour, dip them in 1 beaten egg, then press them into 50 g panko breadcrumbs mixed with ½ tsp smoked paprika. Spray lightly with oil, freeze for 20 minutes so the crumb sets, then cook at 200 °C for 8–10 minutes, shaking the basket halfway.
For halloumi chips without a crumb, toss the sticks in cornflour only and cook for 7 minutes. They come out thin, crisp and golden, and are lighter than the breaded kind. Serve either version with sweet chilli sauce, a garlic yoghurt dip or a squeeze of lemon. Breaded fries are not gluten-free.
Serving
Put the slices on a salad of rocket, tomato and cucumber, tuck them into a wrap, or serve them with a drizzle of honey and a pinch of chilli flakes as a starter. They also sit well beside roasted cauliflower or falafel for a vegetarian lunch. Halloumi air fryer cubes can go on skewers with peppers and courgettes.
Storing and reheating
Cooked halloumi is best eaten straight away, but leftovers keep for up to 2 days in an airtight container in the fridge. Reheat slices or fries in the air fryer at 180 °C for 3–4 minutes until steaming hot all the way through (75 °C) and crisp at the edges. Uncooked halloumi keeps in its brine for several days once opened, so cover it and use it quickly.
Variations
- Honey and thyme: Brush the slices with a little honey and scatter over fresh thyme for the last minute of cooking.
- Sweet chilli bites: Cut the cheese into 2 cm cubes, cook for 6–7 minutes, then toss in sweet chilli sauce while hot.
- Halloumi burger: Cook two thick slices for 8 minutes and serve them in a toasted bun with lettuce, tomato and relish. Check the label if you need a vegetarian-labelled cheese.
Troubleshooting
- The halloumi sticks to the basket
- The basket was not hot enough or the slices were too dry on the surface. Preheat, brush the slices with a little oil and, if your basket is old, line it with a perforated sheet of baking paper.
- The halloumi is rubbery and squeaky
- It has been cooked for too long or left to go cold. Take it out as soon as it is golden and eat it hot. Cut slices at least 1 cm thick so the middle stays soft.
- The fries fall apart or leak cheese
- Coat the sticks while they are cold from the fridge, press the crumb on firmly and freeze them for 20 minutes before cooking. This keeps the coating in place.
Frequently asked questions
How long does halloumi take in the air fryer?
Slices 1 cm thick take about 8 minutes at 200 °C, turned halfway. Thin slices need 5–6 minutes, and bite-sized cubes take 6–7 minutes, shaken halfway.
Can you cook halloumi in the air fryer without oil?
Yes. Halloumi contains enough fat to brown on its own, but a light brush of oil gives a more even colour and helps seasoning stick.
What temperature is best for halloumi in an air fryer?
200 °C is the best all-round setting. At 180 °C the cheese softens before it browns, and above 200 °C the edges can burn before the middle warms through.
How long do halloumi fries take in the air fryer?
Breaded halloumi fries take 8–10 minutes at 200 °C, shaken halfway. Uncoated sticks need about 7 minutes and are better described as halloumi chips.
Is halloumi vegetarian?
Not always, because some producers use animal rennet. If you are cooking for vegetarians, buy a halloumi that is labelled suitable for vegetarians.
