Hash Browns in the Air Fryer

Hash browns from the oven or grill are often soft in the middle and patchy on top, and in a frying pan they soak up a lot of oil. Hash browns in the air fryer turn golden and crunchy on both sides in about 12 minutes with almost no fat. This page covers frozen hash browns first, then homemade ones from fresh potatoes.

Why the air fryer works for hash browns

Hash browns in air fryer baskets are one of the best uses of the machine, because the main challenge is crispness. A frozen hash brown is full of ice crystals, and the oven needs a long time to drive off the moisture. The air fryer's fast, dry air does it in about 12 minutes, so the outside turns crunchy while the middle stays soft and potatoey.

You also use a fraction of the fat. Frozen hash browns are already par-fried, so they only need a light mist of oil to colour evenly. The hot air does the rest, and you can cook breakfast for a family without turning on the oven or grill.

How to make hash browns in the air fryer

Tap a time to start a timer.

  1. Preheat Heat the air fryer to 200 °C for . A hot basket sets the surface of the hash browns quickly, so they crisp instead of going soft.
  2. Load the basket Take the hash browns straight from the freezer. Do not thaw them. Lay them in a single layer with a little space between each one, and spray or brush them very lightly with oil.
  3. Cook Cook at 200 °C for , turning them over after . If your basket is small, cook them in two batches rather than overlapping them.
  4. Check The hash browns are ready when both sides are deep golden and crisp, and the middle is steaming hot all the way through. Add if they are still pale.
  5. Season and serve Sprinkle with a pinch of salt and pepper while they are still hot, and serve straight away.

Tips

  • Cook in a single layer. Hash browns that overlap steam each other. If the basket looks full, cook two rounds and keep the first batch warm in a low oven.
  • Turn once, not often. Leave the hash browns alone for the first 6 minutes, then turn them once. Frequent turning breaks the crust.
  • Keep them frozen. The crispest results come from a hash brown that goes in solid. Do not leave them to thaw on the worktop first.

Homemade hash browns from fresh potatoes

Peel 500 g floury potatoes, grate them and squeeze out as much liquid as you can in a clean tea towel. Mix with 1 tbsp plain flour, ½ tsp salt and a little pepper, then shape into four flat patties about 1 cm thick. Brush with 1 tbsp oil and cook at 190 °C for 15–18 minutes, turning halfway, until deep golden. The shredded potato needs more time than frozen ones because it starts raw. For a Swiss-style single cake, see rösti.

Serving

Serve hash browns in a full English alongside bacon, eggs and grilled tomatoes, or in a bacon and egg bap. They are also good with baked beans, sausages or a spoonful of ketchup. Frozen sausages can be cooked in the same session.

Storing and reheating

Leftover cooked hash browns keep for 1 day in the fridge. Reheat them in the air fryer at 180 °C for 4–5 minutes until crisp and steaming hot all the way through (75 °C). Do not refreeze hash browns that have already been cooked.

Variations

  • Cheesy hash browns: Press grated mature cheddar onto the homemade patties for the last 2 minutes.
  • Spiced hash browns: Mix 1 tsp smoked paprika and ½ tsp garlic granules into the grated potato.
  • Hash brown bites: Cut cooked hash brown patties into quarters and serve with a dip as a snack.

Troubleshooting

The hash browns are soft rather than crisp
The basket was too full or the air fryer was not preheated. Cook in a single layer, preheat first and add 1–2 minutes at the end if they still look pale.
The hash browns break apart when turned
Do not turn them in the first 5 minutes, when the frozen potato is still setting. Use a spatula or tongs and turn them gently once.
Homemade hash browns are wet and fall apart
Fresh potato holds a lot of water. Squeeze the grated potato in a clean tea towel until it is really dry, and rinse off the starch only if you want a lighter texture.

Frequently asked questions

How long do frozen hash browns take in the air fryer?

Frozen hash browns need about 12 minutes at 200 °C, turned halfway. Thin shaped patties may be ready after 10 minutes, and thick ones can take 14.

Do you need to defrost hash browns before air frying?

No. Cook them from frozen. Thawing makes them soggy and more likely to fall apart.

Do you need oil for hash browns in the air fryer?

Most frozen hash browns are pre-fried and need no extra oil. A light spray gives a more even colour. Homemade hash browns need 1–2 tablespoons of oil to crisp.

How do you make hash browns from fresh potatoes in the air fryer?

Grate the potatoes, squeeze them dry, season and shape into patties. Cook them at 190 °C for 15–18 minutes, turning halfway, until golden and cooked through.

What is the difference between hash browns and rösti?

Hash browns are usually shredded, pre-cooked or shaped into patties or triangles, while rösti is a Swiss dish of grated potato fried in one large cake.
