Rösti in the Air Fryer

A good rösti has a lacy, crunchy crust and a soft, buttery middle, but in a frying pan it needs constant attention and a lot of fat. Rosti in air fryer baskets cooks evenly from every side with only a tablespoon or two of oil, and it turns out golden in about 16 minutes. The trick is to squeeze the grated potato really dry, and the steps below show how.

Why the air fryer works for rosti

Potato rosti in air fryer form solves the two problems of the frying pan: it needs less fat, and it does not burn on one side while it stays raw on the other. The hot air circulates round the whole round, so the outer strands of potato turn crisp and lacy while the inside softens in its own steam. The method suits a Swiss-style rösti made from raw grated potato, and it also works for mini rösti and for frozen rosti from the freezer.

Making rosti in air fryer machines is quick, and it is easy to cook them two at a time. The thing that matters most is moisture. Raw potato holds a lot of water, and any left in the shreds turns to steam and stops the crust forming. Squeeze hard, season, shape firmly, and the air fryer does the rest. If you search for "airfryer rösti", this is the same dish: rösti is the Swiss spelling and rosti is the common English one.

  1. Grate the potatoes Peel the potatoes and grate them on the coarse side of a box grater. Do not rinse them, because the starch helps the strands stick together. Grate the onion too, if using.
  2. Squeeze dry Wrap the grated potato in a clean tea towel and twist hard over the sink until almost no liquid comes out. This is the most important step for a crisp rösti.
  3. Season and shape Mix the potato with the oil, salt and pepper. Divide into 4 portions and press each into a flat round about 1 cm thick and 10 cm across, with a slightly thinner middle.
  4. Cook Preheat the air fryer to 190 °C. Place the rösti on a piece of perforated baking paper or a lightly oiled basket, leaving space between them (two at a time in most baskets, so cook in two batches). Cook for , turning carefully after with a fish slice.
  5. Check The rösti are ready when the edges are deep golden and crisp and a knife slides through the centre easily. Serve straight away.

Tips

  • Use floury potatoes. Maris Piper or King Edward have enough starch to bind the strands. Waxy salad potatoes make a gluey, less crisp rösti.
  • Press the mixture firmly. Shape each round with your hands and flatten it with the back of a spoon so the shreds hold together when you turn it.
  • Oil the paper, not just the potato. A little oil on the baking paper or basket gives an even, golden base.

Serving

Serve the rösti with a fried or poached egg for breakfast, or with smoked salmon and soured cream for a light lunch. They are also a good side for sausages or pork chops. For other potato dishes with the same crisp edge, try potato wedges or hasselback potatoes.

Storing and reheating

Keep cooked rösti in the fridge in a covered container for up to 2 days. Reheat in the air fryer at 180 °C for 5–6 minutes until crisp and steaming hot all the way through (75 °C in the centre). Uncooked grated potato does not keep, so only grate what you will cook straight away.

Variations

  • Cheese rösti: Mix 50 g grated gruyère or cheddar into the potato, or sprinkle it on top for the last 2 minutes (not vegan or dairy-free).
  • Sweet potato rosti: Swap half or all of the potato for grated sweet potato and add a pinch of smoked paprika.
  • Mini rösti: Make 12 small 5 cm rounds and cook at 190 °C for 10–12 minutes, to serve as party nibbles with soured cream.

Troubleshooting

The rosti falls apart when turned
The potato was too wet or the rösti too thin. Squeeze harder, press the mixture firmly, and let it cook for 8 minutes before turning with a wide fish slice.
The rösti is pale and soft
There is still too much moisture. Squeeze it again in a dry cloth, use enough oil and do not overlap the rounds in the basket.
The potato turns grey
Grated potato oxidises quickly. Grate it just before you cook, or keep it in a covered bowl for only a few minutes.

Frequently asked questions

How long does rosti take in an air fryer?

Fresh rösti of about 1 cm take 14–16 minutes at 190 °C, turned halfway. Mini rösti take 10–12 minutes.

Can you cook frozen rosti in an air fryer?

Yes. Cook frozen rosti at 200 °C for 12–15 minutes, turning once, with no extra oil needed. Follow the pack if it gives a different time.

Can you make sweet potato rosti in an air fryer?

Yes, with the same method. Sweet potato holds more moisture and sugar, so cook at 180 °C for 14–16 minutes and watch the edges.

Do you need to par-boil the potatoes for rösti?

Swiss rösti is often made with par-boiled potatoes, which give a softer middle. Raw grated potato, as here, gives a crisper, lacier finish and is quicker.
