Patatas Bravas in the Air Fryer
Good patatas bravas need potatoes that are crunchy outside, fluffy inside, and a sauce with a smoky kick. A deep fryer is the traditional route, but a patatas bravas air fryer method gets the same result with just a spoonful or two of oil. The potatoes cook in about 20 minutes while the sauce simmers on the hob, so everything is ready together.

Why the air fryer works for patatas bravas
Patatas bravas air fryer style keeps the best part of the Spanish tapas classic, a shatteringly crisp potato, while skipping the pan of hot oil. Roughened, parboiled potato cubes have a starchy surface that dries and browns as hot air circulates around them, so each piece gets crisp on all sides. A tablespoon of oil is enough to help the colour.
Parboiling is the step that matters most. It cooks the centres so they turn fluffy, and the broken surface fries into a crunchy shell. The sauce takes 10 minutes on the hob, which is exactly the time you need while the potatoes cook, so there is no waiting around. In an air fryer patatas bravas cook best in a single layer, so use two batches in a small basket.

- Air fry Preheat the air fryer to 200 °C for . Add the potatoes in a single layer, or in two batches, and cook for , shaking the basket every , until deep golden and crisp.
- Make the sauce While the potatoes cook, warm the remaining oil in a small pan and soften the garlic for 30 seconds. Stir in the tomato purée, chopped tomatoes, 1 tsp smoked paprika, cayenne, vinegar and sugar. Simmer for , then blend until smooth and season.
- Serve Tip the hot potatoes into a shallow dish, spoon over the sauce and scatter with parsley. Eat straight away, while the edges are still crunchy.

Tips
- Choose a floury potato. Maris Piper, King Edward or similar fluff up inside and crisp on the outside. Waxy potatoes hold their shape but stay denser.
- Shake the colander. After draining, give the potatoes a good shake so the corners rough up. These rough bits are what turn into crunchy edges in the air fryer.
- Add the sauce at the last moment. Spooning it over early makes the crust soften. For a crisper plate, serve the sauce in a bowl beside the potatoes.
Serving
Serve patatas bravas with other tapas dishes, such as meatballs in tomato sauce, chickpeas with paprika or a simple tortilla and olives. A spoonful of garlic mayonnaise or aioli over the top is traditional in many bars, but it makes the dish no longer vegan or dairy-free. The potatoes are also good with grilled meat, or as an alternative to potato wedges.
Storing and reheating
Keep leftover potatoes and sauce in separate airtight containers in the fridge for up to 2 days. The sauce freezes well for up to 3 months. Reheat the potatoes in the air fryer at 180 °C for 5 minutes, until crisp and steaming hot all the way through, and warm the sauce in a pan until it bubbles. Reheating patatas bravas in the air fryer works much better than the microwave, which makes them soft.
Variations
- Spicier sauce: Double the cayenne, or add a finely chopped fresh red chilli to the garlic, for a version closer to the sauces used in some Madrid bars.
- Roasted garlic: Add 4 unpeeled garlic cloves to the basket for the last 10 minutes, then squeeze out the soft flesh and stir it into the sauce.
- Baby potatoes: Halve small new potatoes and cook them at 190 °C for 22 minutes, with no need to peel.
Troubleshooting
- The potatoes are pale and soft
- They were not dried after boiling, or the basket was too full. Let the steam escape for a few minutes and cook in two batches if the cubes pile up.
- The potatoes fall apart when tossed
- They were boiled for too long. 6 minutes is enough for 2.5 cm cubes. Stop the moment a knife slips in with a little resistance.
- The sauce is too sharp or flat
- Taste it after blending. A pinch more sugar softens sharpness, and a little extra vinegar or salt wakes up a dull sauce.
Frequently asked questions
How long do patatas bravas take in an air fryer?
Parboiled 2.5 cm cubes take about 20 minutes at 200 °C, shaken every 5 minutes. Raw cubes without parboiling need 25 minutes and are slightly less fluffy.
Can you make patatas bravas in the air fryer without boiling first?

Can you cook frozen patatas bravas in the air fryer?
Frozen potato cubes cook from frozen at 200 °C in 15–18 minutes with no extra oil. Make the sauce fresh, or warm any ready-made sauce on the hob separately.
