Roast Chestnuts in the Air Fryer

Roast chestnuts usually need an open fire, a special pan or a long time in the oven. In the air fryer you can roast fresh chestnuts in about 20 minutes, with split shells, warm sweet centres and none of the smoke. You need only a sharp knife and a bowl of water, and they are ready for a snack, a stuffing or a Christmas side.

Why the air fryer works for chestnuts

Chestnuts in air fryer baskets roast in a similar way to a traditional chestnut pan, but with much less effort. The fan surrounds each nut with dry heat, so the shell dries and curls while the inside steams gently in its own moisture. That is exactly what you need to get a tender, sweet chestnut that is easy to peel, and the whole process needs just 20 minutes.

The only skill is preparation. You need to score the shell so the steam can escape, and peel the nuts while they are still warm. Roasting chestnuts in air fryer form also keeps the smell and smoke of roasting out of the house, and it is a simple way to get a Christmas favourite without a fire. Buy fresh chestnuts in autumn and winter, when they are in season.

How to roast chestnuts in the air fryer

Tap a time to start a timer.

  1. Score the shells Rinse the chestnuts and dry them. Using a small, sharp knife on a stable board, cut a cross or a long slit through the shell on the flat side of each chestnut. This stops them bursting in the basket and makes peeling easier.
  2. Soak briefly Put the chestnuts in a bowl of warm water for , then drain well. The water steams the nuts inside the shell and keeps them tender. Toss with the olive oil if you like a shinier finish.
  3. Preheat and cook Heat the air fryer to 200 °C for . Spread the chestnuts in a single layer, with the cut side up, and cook for at 200 °C, shaking the basket every .
  4. Check The shells should have curled back from the cuts and the nuts should feel tender when squeezed. If they are still firm, cook for another .
  5. Peel while warm Wrap the hot chestnuts in a clean tea towel for , then peel off both the outer shell and the papery inner skin while they are warm. Sprinkle with salt and eat.

Tips

  • Choose heavy nuts. A good fresh chestnut feels heavy for its size and the shell is glossy. Light or rattling nuts are dried out.
  • Cut safely. Hold each chestnut flat side down on a board with a tea towel under it, and cut away from your fingers. A short, serrated knife works well.
  • Peel in batches. The skin sticks as the nut cools. Keep the rest wrapped in a tea towel and peel a handful at a time.

Serving

Eat the chestnuts warm with a pinch of salt, or chop them into stuffing, add them to a nut roast or stir them into soups. Roast chestnuts air fryer batches also go well with Brussels sprouts at Christmas, or with pumpkin and squash in an autumn salad. For a full festive menu, see the Christmas dinner guide.

Storing and reheating

Peeled roast chestnuts keep for up to 3 days in a sealed container in the fridge. They are best eaten the day they are roasted. To reheat, put them in the air fryer at 180 °C for 3–4 minutes until steaming hot all the way through (75 °C). You can also freeze peeled chestnuts for up to 3 months.

Variations

  • Salted butter chestnuts: Toss the peeled hot chestnuts with 10 g melted butter and a pinch of sea salt. Not vegan or dairy-free.
  • Rosemary and honey: Roast peeled, cooked chestnuts with 1 tsp honey and a little chopped rosemary at 180 °C for 6–8 minutes (not vegan).
  • Chocolate chestnuts: Dip warm peeled chestnuts into melted dark chocolate and leave them to set on baking paper for a festive treat. Use dairy-free chocolate to keep it vegan.

Troubleshooting

The chestnuts are hard to peel
They cooled down before you peeled them, or the cut was too small. Peel in small batches while hot, keeping the rest wrapped in a tea towel, and cut a longer slit next time.
The chestnuts burst in the basket
They were not scored deeply enough, so steam had nowhere to go. Cut through the hard shell on every nut, and discard any that rattle or feel light.
The nuts are dry and shrivelled
They were old or overcooked. Choose heavy, glossy chestnuts, do not skip the short soak and check at 15 minutes.

Frequently asked questions

How long do chestnuts take in the air fryer?

Whole fresh chestnuts take about 20 minutes at 200 °C, shaken every 5 minutes. Smaller nuts may be ready in 15 minutes and very large ones may need 25 minutes.

Do you have to score chestnuts before roasting them in an air fryer?

Yes. A cross or slit lets steam escape. Unscored chestnuts can burst and the shells are harder to remove.

Can you roast peeled or cooked chestnuts in the air fryer?

Yes. Vacuum-packed cooked chestnuts only need warming and browning. Toss them in a little oil and cook at 180 °C for 6–8 minutes, shaking once.

Can you cook chestnuts in an air fryer without soaking them?

Yes, but soaking for 5 minutes helps them stay moist inside. Without it, add 1 tsp of water to the bowl and toss before cooking.

How do you know when roasted chestnuts are done?

The shells curl open at the cut and the nut inside is soft, slightly sweet and pale gold. Hard, chalky centres need a few more minutes.
