Stuffed Mushrooms in the Air Fryer
Stuffed mushrooms are a classic starter, but in the oven they often turn out watery and take half an hour. In the air fryer the cap cooks quickly and the filling browns on top, ready in about 12 minutes. This version uses garlic cream cheese, mature cheddar and a crunchy herb breadcrumb topping, with notes on bacon, sausage and portobello caps.

Why the air fryer works for stuffed mushrooms
Stuffed mushrooms air fryer style are quick because the cap is small and the hot air circulates around it from all sides. The topping browns on top while the mushroom steams in its own juices underneath, which keeps the flesh tender rather than rubbery. In the oven this typically takes 25–30 minutes and the filling often stays pale; here you get colour and a crisp crumb in around 12.
Stuffed mushrooms in air fryer baskets also use less space than a baking tray. A 4–6 litre basket holds 6–8 large caps in a single layer, so the 12 caps here need two batches. Choose mushrooms of similar size so they cook evenly, and keep the filling firm so it does not slide out.

Tips
- Choose large, closed caps. They hold the filling better than open flat ones and stay juicy. Look for caps 5–6 cm wide with a deep hollow.
- Use the stalks. Chop them and stir them into the filling for extra flavour and no waste.
- Do not overfill. A slightly mounded filling browns well; a big heap will spill and burn on the basket.
Serving
Serve the mushrooms as a starter with a rocket salad and a squeeze of lemon, or on a sharing board with spring rolls and other nibbles. As a light main, two or three with a green salad and new potatoes is enough. If you are cooking a vegetable side at the same time, asparagus is a good partner. For more timings see the air fryer cooking times chart.
Storing and reheating
Leftover mushrooms keep for up to 2 days in an airtight container in the fridge. Reheat them in the air fryer at 160 °C for 4–5 minutes, until steaming hot all the way through (75 °C). They are not suitable for freezing once cooked, as the mushrooms release a lot of water as they thaw.
Variations
- Sausage or bacon: Fry 100 g sausage meat or chopped bacon until cooked through, drain and mix it into the filling. This version is not vegetarian.
- Spinach and feta: Wilt 100 g spinach, squeeze it dry and mix with 100 g crumbled feta and a little nutmeg.
- Crab and cream cheese: Fold 100 g well-drained white crab meat into the cream cheese for a more indulgent starter. Not vegetarian.
Troubleshooting
- The mushrooms are watery
- Mushrooms hold a lot of moisture. Wipe rather than wash them, use full-fat cream cheese and pour away any liquid that collects in the basket before serving.
- The topping burns before the mushrooms are soft
- The heat is too high or the caps are very large. Lower to 170 °C and add 3 minutes, or cover loosely with foil for the first 6 minutes.
- The filling slides out
- Press the filling firmly into the cap and mound it only slightly. The breadcrumb topping holds it in place as it softens.
Frequently asked questions
How long do stuffed mushrooms take in an air fryer?
Large closed cup mushrooms take 10–12 minutes at 180 °C. Portobello caps need 14–16 minutes, and button mushrooms for bite-sized nibbles only 6–8 minutes.
Can you make stuffed mushrooms without cream cheese?
Yes. Mix breadcrumbs, grated cheddar, chopped stalks, garlic and herbs with a spoon of olive oil. It makes a drier, crunchier stuffing. For vegan mushrooms, use a plant-based soft cheese.
Can you stuff portobello mushrooms in the air fryer?
Yes, but they need 14–16 minutes at 180 °C. Remove the dark gills with a teaspoon first, so the stuffing stays pale and the mushroom does not turn watery.
Can you prepare stuffed mushrooms in advance?
Yes. Fill them up to 24 hours ahead and keep them covered in the fridge. Add 2 minutes to the cooking time.
