Asparagus in the Air Fryer

Asparagus has a short window between crunchy and limp. Boiled, it can turn watery in seconds, and in a hot oven it often scorches at the tips before the stalks soften. Asparagus in an air fryer cooks fast and evenly, so the spears come out tender with lightly browned tips in around 7 minutes, using just a spoonful of oil.

Why the air fryer works for asparagus

Asparagus in an air fryer cooks in a fraction of the time it takes in the oven, and without the waterlogged texture that comes from boiling or steaming. The fast, dry heat softens the stalk while the thin tips crisp up and take on a slight nuttiness. Because the spears sit in a single layer with air moving around each one, they cook at the same rate, and there is no need to heat a whole oven for a side dish.

Air fryer asparagus is also forgiving of how you season it. A little oil, salt and garlic are enough, and the same method works for thin spears in spring and thicker supermarket bunches the rest of the year. The only detail that matters is the spear thickness, which decides whether the cooking time is 5 minutes or 9.

How to make asparagus in the air fryer

  1. Trim the spears Hold each spear at both ends and bend it until it snaps. The woody base breaks off at its natural point. Alternatively, line the spears up and cut about 2–3 cm off all the bases in one go.
  2. Dry and season Rinse the asparagus and pat it fully dry with kitchen roll. Toss the spears in a bowl with the oil, garlic granules, salt and pepper until every spear has a thin coat.
  3. Preheat Heat the air fryer to 200 °C for so the spears start to colour as soon as they go in.
  4. Cook Lay the spears in the basket in a single layer, or in two loose layers laid crosswise. Cook for , shaking the basket or turning the spears halfway. Thin spears are ready at , thick ones need .
  5. Check and serve The spears are done when a knife slides easily into the thickest part and the tips are crisp and brown. Squeeze lemon over them and serve straight away while they are still firm.

Tips

  • Cook spears of similar thickness together. Thin spears overcook long before thick ones are tender. If your bunch is mixed, start the thick spears first and add the thin ones later.
  • Keep the basket loose. Spears piled on top of each other steam instead of roast. Two shallow layers laid in opposite directions work if you are cooking a large bunch.
  • Season after cooking for a fresh finish. A squeeze of lemon, some lemon zest or a few flakes of parmesan added at the end taste brighter than cheese cooked into the spears.

Serving

Asparagus in an air fryer is a natural partner for salmon fillet, roast chicken or a soft-boiled egg for dipping. For a vegetarian plate, serve it next to broccoli and new potatoes, or chop it into an omelette or pasta. More ideas are on the vegetables page. Air fryer asparagus with a drizzle of olive oil also works cold in a salad.

Storing and reheating

Cooked asparagus keeps for up to 2 days in an airtight container in the fridge. To reheat it, put the spears in the air fryer at 180 °C for 2–3 minutes until they are steaming hot all the way through. Do not reheat them more than once, as they turn stringy and dull in colour.

Variations

  • Parmesan: Sprinkle 2 tbsp finely grated parmesan over the spears for the last 2 minutes of cooking. This version is not vegan or dairy-free.
  • Wrapped in bacon: Wrap 3–4 spears in a slice of streaky bacon and cook at 190 °C for 10–12 minutes, turning once, until the bacon is crisp and cooked through (not vegetarian or vegan).
  • Lemon and chilli: Toss the spears with the zest of half a lemon and a pinch of chilli flakes before cooking for a brighter, spicier side.

Troubleshooting

The asparagus is limp and soggy
It was cooked for too long or crowded in the basket. Cook it in a single layer, start checking at 5 minutes and serve immediately, as the spears keep softening in their own steam.
The tips are burnt but the stalks are still tough
The spears were different thicknesses. Sort them by size and cook thick spears first, adding the thin ones for the last 3 minutes, or snap off more of the woody base.
The seasoning slides off or the spears are pale
Wet spears will not brown and the oil will not hold the seasoning. Dry the spears properly and toss them in oil before adding salt.

Frequently asked questions

How long do you cook asparagus in an air fryer?

Medium spears take 6–8 minutes at 200 °C, shaken or turned halfway. Thin spears need 5–6 minutes and thick spears 8–9 minutes, so sort them by size for an even result.

Can you cook asparagus in an air fryer from frozen?

Yes. Cook frozen spears at 200 °C for 8–10 minutes without thawing, shaking them twice. They come out softer than fresh asparagus, so they suit soups, omelettes and pasta better than serving on their own.

Do you need to peel asparagus before air frying?

Only thick spears need it. Peel the bottom third with a vegetable peeler, because the skin there is fibrous. Thin and medium spears only need the woody base snapped off.

Is asparagus better in the air fryer or the oven?

The air fryer is quicker, because it needs about 7 minutes against 12–15 in the oven, and it gives crisper tips. The oven is better if you are roasting several trays at once.

Can you air fry asparagus without oil?

You can, but the spears will be drier and a little leathery. A teaspoon of oil per portion is enough to keep them tender and help the seasoning stick.
