Chicken Crown in the Air Fryer

A chicken crown is the breast of the bird with the bone left in and the legs removed, so you get tender white meat and crisp skin without the fuss of carving a whole chicken. It suits the air fryer well because it is compact and cooks evenly. A 1 kg crown takes around 45 minutes at 180 °C, and this page gives the timings for other weights too.

Why the air fryer works for a chicken crown

A chicken crown in air fryer baskets is much quicker than a whole bird. With the legs removed, the breast is the only thing to cook, so there is no risk of overcooking the white meat while you wait for the thighs. The bones left in the breast keep it juicy, and the hot air crisps the skin.

A crown also fits the basket well. A 1 kg crown suits most 5 and 6 litre machines, and it takes about 45 minutes, against around an hour for a whole bird. The trade-off is that you lose the dark meat and the carcass for stock. If you want the full bird with legs, see whole chicken in the air fryer, and for just the dark meat, chicken thighs.

How to make a chicken crown in the air fryer

Tap a time to start a timer.

  1. Bring to room temperature Take the crown out of the fridge before cooking, then pat it dry with kitchen roll. A cold crown cooks unevenly.
  2. Make the herb butter Mix the butter with the garlic, thyme, a pinch of salt and a little lemon zest. Gently loosen the skin over each breast with your fingers and spread most of the butter underneath. Rub the oil over the skin.
  3. Season and preheat Season the skin with the salt, pepper and paprika. Heat the air fryer to 180 °C for . Put the lemon half inside the cavity.
  4. Cook Place the crown breast side up in the basket, with space around it. Cook for at 180 °C. After , check the colour; if the skin is already deep golden, cover the top loosely with a piece of foil.
  5. Check the temperature The FSA says chicken is safe once it has reached 75 °C for 30 seconds, with no pink meat and clear juices. Push a thermometer into the thickest part of the breast, near the bone but not touching it. If it is lower, cook for 5 more minutes.
  6. Rest and carve Lift the crown onto a board, cover loosely with foil and rest for . Carve each breast away from the bone in one piece, then slice it across.

Times are a guide and depend on the size of the food and the power of your air fryer. Cooked when the centre reaches 75 °C. See also cooking times and temperatures for all dishes.

Tips

  • Weigh the crown. Cooking time depends on weight, not just on the pack size, so check it. Add or subtract about 10 minutes for every 250 g.
  • Use the butter under the skin. It bastes the meat from the inside and also makes the skin brown more evenly.
  • Save the juices. Pour the juices from the bottom of the air fryer into a small pan and use them as the base for a quick gravy with a splash of stock.

Serving

Carve the crown at the table and serve it as a small Sunday roast with jacket potatoes, carrots, broccoli and gravy. Brussels sprouts work well in winter. A chicken crown in air fryer batches makes a good midweek roast for four. For a full holiday meal, see Christmas dinner in the air fryer.

Storing and reheating

Leftover chicken keeps for up to 3 days in the fridge, wrapped or in a container. Slice it and reheat the slices in the air fryer at 160 °C for 4–5 minutes, until steaming hot all the way through (75 °C in the centre). Cold sliced crown is also very good in sandwiches, salads and pies.

Variations

  • Lemon and thyme: Put a few thyme sprigs and lemon slices under the skin with the butter for a fresh, light flavour.
  • Smoky paprika and garlic: Double the paprika and add 1 tsp garlic granules to the rub for a deeper colour and flavour.
  • Honey and mustard glaze: Mix 1 tbsp honey with 1 tbsp wholegrain mustard and brush it over the crown for the last 5 minutes.

Troubleshooting

The skin browns too fast
Breast skin is thin and can darken before the middle is cooked. Cover the top loosely with foil after 30 minutes, and lower the heat to 170 °C for the remainder.
The breast meat is dry
It has been in the air fryer too long. Start checking the temperature 10 minutes early, take it out at 75 °C and let it rest. The butter under the skin helps keep the meat moist.
The crown does not fit in the basket
Check the size before buying. A 1 kg crown fits most 5–6 litre baskets, but a 1.5 kg crown needs a large or oven-style air fryer. Smaller crowns are a better choice for a standard machine.

Frequently asked questions

How long does a chicken crown take in an air fryer?

About 45 minutes at 180 °C for a 1 kg crown. A 500 g crown takes 25–28 minutes, 700 g takes 33–36 minutes and 1.5 kg needs 60–65 minutes. Check that the thickest part reaches 75 °C.

Can you cook a chicken crown from frozen in the air fryer?

It is safer to defrost it fully in the fridge first, which takes about 24 hours for a 1 kg crown. A partly frozen crown cooks unevenly and is hard to check.

Should I cook the crown breast side up or down?

Breast side up for the whole time. The skin crisps on top, and the fat runs down over the meat to keep it moist.

Do I need to cover a chicken crown with foil?

Not at the start. Add a loose foil tent only if the skin is getting too dark before the temperature is reached.

Can I stuff a chicken crown?

Yes, but keep the stuffing loose and small so the heat can reach it. Cook it separately or add a spoonful under the skin, and check that everything reaches 75 °C.
