Flapjacks in the Air Fryer
Flapjacks are one of the simplest British bakes, and a small tin fits the air fryer well. The oats toast evenly and the edges turn golden while the middle stays soft and chewy. This batch makes 9 squares in about 15 minutes of baking, without heating the whole oven.

Why the air fryer works for flapjacks
Air fryer flapjacks are quick because there is almost nothing to them: oats, butter, sugar and golden syrup. The mixture is thin in the tin, so the fan toasts the top and edges quickly while the middle stays chewy. A small tin also heats through in minutes, so you do not need to switch on the oven for such a short bake.
The limit is the size of your tin, which has to fit the basket with a finger of space around it. A 16–18 cm tin suits a 4–6 litre machine and makes 9 squares. If you ever make a larger batch, bake it in two rounds rather than crowding the basket. This is a lovely British bake to make alongside cookies or brownies.

- Prepare the tin Grease a 16–18 cm square or round tin that fits your basket and line the base with baking paper. Make sure the paper sits flat inside the tin, with no overhang.
- Melt the base Warm the butter, sugar and golden syrup in a saucepan over a low heat, stirring until the butter has melted and the sugar has dissolved. Take it off the heat.
- Mix Stir in the oats and salt until every oat is coated. Spoon the mixture into the tin and press it down firmly and evenly with the back of a spoon. Firm pressing keeps the flapjacks from crumbling.
- Bake Preheat the air fryer to 160 °C for . Lower the tin into the basket and bake for . If the top darkens early, cover it loosely with foil for the last . The edges should be deep golden and the middle just set.
- Cool and cut The flapjacks will still be soft when they come out. Leave them in the tin for , then mark into 9 squares with a knife. Let them cool completely, about , before lifting them out.

Tips
- Use porridge oats, not jumbo. Smaller oats bind better and give a chewier flapjack. Jumbo oats make a more rustic, crumbly bar.
- Press hard. Pack the mixture into the tin firmly, almost as if you were making a biscuit base. This is the main secret to flapjacks that hold together.
- Be patient with cooling. Flapjacks need time to set, so wait until they are cold before lifting them from the tin.
Serving
Serve the squares with a cup of tea or pack them for a lunchbox. They also work warm with a scoop of vanilla ice cream. Air fryer flapjack batches keep well, so they suit a packed lunch or a day out. A slice of apple pie or a plate of muffins makes a good partner for a tea table.
Storing and reheating
Flapjacks keep for up to 5 days in an airtight tin, or for 3 months in the freezer. To refresh a day-old square, warm it in the air fryer at 150 °C for 2 minutes, until soft and slightly warm.
Variations
- Fruit and seed: Stir in 40 g raisins or chopped dried apricots and 2 tbsp mixed seeds before pressing.
- Chocolate topped: Melt 50 g dark chocolate and spread it over the cooled flapjacks, then chill for 20 minutes.
- Peanut butter: Replace 2 tbsp of the golden syrup with smooth peanut butter and add a pinch more salt.
Troubleshooting
- The flapjacks fall apart
- The mixture was not pressed down firmly enough, or they were cut while warm. Press hard, let them cool fully and chill for 30 minutes before cutting.
- The flapjacks are too hard
- They baked for too long. Take them out when the edges are golden and the middle looks slightly under done, as they firm up when they cool.
- The edges burn
- The fan heats the edges faster than the middle. Use a lighter-coloured tin, drop to 150 °C and add 2–3 minutes.
Frequently asked questions
How long do flapjacks take in an air fryer?
15 minutes at 160 °C for a tin about 2 cm deep gives a chewy flapjack. For a crunchier bite, add 2–3 minutes.
Can you make flapjacks without golden syrup?
Yes. Replace it with honey or maple syrup at the same quantity. Honey gives a slightly softer flapjack that browns faster.
How do I make air fryer flapjacks healthier?
Reduce the sugar to 40 g and add mashed banana, chopped dates or seeds. The texture will be softer, so chill them well before cutting.
Do I need baking paper?
It makes lifting the flapjacks out much easier. Cut it to fit the tin exactly so it cannot lift in the air flow.
How long do flapjacks take to set?
Allow about 45 minutes at room temperature, or 20 minutes in the fridge, before cutting cleanly.
