Pork Ribs in the Air Fryer

Ribs normally need hours in a low oven, but pork ribs in air fryer baskets can be tender and sticky in under an hour. The trick is to steam them in foil first, then unwrap and glaze them at a higher heat. You need a sharp knife, a basket of 5 litres or more, and a rack of ribs cut into smaller portions.

Why the air fryer works for ribs

Ribs in air fryer baskets are a good shortcut because the machine behaves like a small, fast convection oven. Wrapped in foil, the ribs steam in their own juices, which breaks down the connective tissue; unwrapped at the end, the circulating air dries and caramelises the glaze. The whole job takes under an hour instead of three.

Size is the main limit. A full rack will not lie flat in most baskets, so cut it into portions of 3–4 bones. Pork ribs in air fryer drawers of 4 litres may need two batches. If you want slow-cooked results for a large crowd, an oven is still the better choice.

How to make pork ribs in the air fryer

Tap a time to start a timer.

  1. Prepare the ribs Turn the rack bone side up and peel off the thin membrane, using a knife to lift one corner and kitchen roll to get a grip. Cut the rack into portions of 3–4 bones so they fit the basket.
  2. Season Mix the sugar, paprika, garlic, onion, mustard powder, salt and pepper. Rub the oil over the ribs, then press the spice mix all over them.
  3. Wrap Wrap each portion tightly in foil, with the shiny side in. This steams the meat and makes it tender. Chill for up to if you have time.
  4. Cook in foil Preheat the air fryer to 170 °C for . Place the foil parcels in the basket and cook for , without turning.
  5. Glaze Unwrap the ribs, brush with the barbecue sauce and return them to the basket at 200 °C for , until the glaze is sticky and caramelised. The meat should pull back from the bone and reach about 90 °C, which is for tenderness, as pork is safe at 70 °C. Rest for .

Tips

  • Remove the membrane. The thin silvery skin on the bone side stays tough when cooked. It peels off easily with kitchen roll once you lift a corner.
  • Choose meaty ribs. Look for racks with a thick layer of meat over the bones. Very thin ones cook faster and dry out sooner.
  • Rest before cutting. Five minutes under foil lets the juices settle, so the ribs stay moist when you slice between the bones.

Serving

Serve the ribs with coleslaw, corn on the cob and potato wedges for a relaxed meal. Chips and baked beans work too. If you like pulled meat rather than ribs, see pulled pork, and for a quicker alternative, try pork chops. Timings for other meats are on the air fryer cooking times page.

Storing and reheating

Leftover ribs keep for up to 3 days in the fridge in a sealed container. Reheat them in the air fryer at 160 °C for 6–8 minutes, until they are steaming hot all the way through (75 °C). Brush with a little more sauce for the last 2 minutes if the glaze has dried.

Variations

  • Dry rub only: Skip the barbecue sauce and finish the unwrapped ribs for 8 minutes for a drier, spicier crust.
  • Chinese-style: Replace the barbecue sauce with 2 tbsp hoisin, 1 tbsp honey and 1 tsp five-spice.
  • Honey and mustard: Glaze with 2 tbsp honey and 1 tbsp wholegrain mustard.

Troubleshooting

The ribs are tough
They need longer in the foil. Cook for another 10 minutes at 170 °C, until the meat shrinks back from the bone ends and a knife slides in easily.
The glaze burns
Barbecue sauce contains sugar, so add it at the end and watch closely. Brush on a thin coat, and add another coat for the last 2 minutes.
The ribs do not fit in the basket
Cut the rack into portions and stack them loosely on their sides, or cook in two batches. A 4 litre air fryer may only fit half a rack.
