Pork Steaks in the Air Fryer
Supermarket pork steaks are lean, cheap and quick, but they turn dry and chewy in a pan if you look away for a minute. Pork steaks in air fryer baskets cook through evenly in around 10 minutes, and a short marinade keeps them tender and full of flavour. This guide covers the everyday boneless steaks from the meat chiller, with timings, three marinades and the temperature to aim for.

Why the air fryer works for pork steaks
Pork steaks in air fryer baskets suit the way these cuts are sold. They are thin, lean and boneless, which means the window between cooked and overcooked is short. A frying pan heats one side at a time and often leaves a grey, tough surface. The air fryer moves hot air over the whole steak at once, so the outside browns lightly while the inside finishes at the same pace.
This page is about the everyday boneless pork steaks from the supermarket chiller, usually cut from the leg. If you have thicker cuts from the shoulder, see pork shoulder steaks, and for neat slices from the loin there is a separate page on pork loin steaks. Bone-in chops are covered under pork chops.
How to make pork steaks in the air fryer
Tap a time to start a timer.
- Marinate Mix the oil, soy sauce, honey, garlic, paprika and mustard in a bowl. Turn the steaks in the mixture and leave them for at room temperature, or up to in the fridge.
- Prepare Lift the steaks out of the marinade and let the excess drip off, then pat the surface lightly with kitchen roll so it browns rather than steams. Season with a little pepper. Soy sauce is already salty, so add salt only if you need it.
- Preheat Preheat the air fryer to 190 °C for .
- Cook Lay the steaks in a single layer, not touching. Cook for , turning them over after . Thin steaks under 1 cm need only .
- Check and rest Push a meat thermometer into the thickest part. The FSA says pork should be cooked through with no pink meat, so take the steaks out at 70 °C. Rest them for under loose foil, then slice or serve whole.

Tips
- Match the marinade to the meal. Soy, honey and garlic suit rice and stir-fried greens. For a British plate, try 1 tbsp wholegrain mustard, 1 tbsp cider vinegar and a pinch of sage. For something warmer, use 1 tsp ground cumin, 1 tsp paprika and the juice of half a lemon.
- Keep the marinating time short. Acid or sugar left on lean meat for more than 8 hours can make the surface mushy. Overnight is too long for a lemon-based marinade.
- Do not crowd the basket. Steaks that touch steam where they meet. Cook two or three at a time if your basket is small, and keep the finished ones covered.
Serving
Serve the steaks with creamy mash and greens, or slice them over a salad with a mustard dressing. They are also good with chips and peas for a midweek dinner, or with roasted carrots and a spoonful of apple sauce. Cooking times for other cuts are listed on the air fryer cooking times page.
Storing and reheating
Leftover pork steaks keep for up to 3 days in an airtight container in the fridge. Reheat them in the air fryer at 160 °C for 4–5 minutes, until steaming hot all the way through (75 °C in the centre). Cold sliced steak also works well in a sandwich with chutney.
Variations
- Crumbed pork steaks: Dip the steaks in flour, beaten egg and breadcrumbs, spray lightly with oil and cook at 190 °C for 10–12 minutes.
- BBQ glaze: Brush with 2 tbsp barbecue sauce for the last 2 minutes only, so the sugars do not burn.
- Lemon and herb: Marinate in lemon juice, olive oil, garlic and thyme for a lighter flavour that suits summer salads.
Troubleshooting
- The steaks are tough and dry
- Lean boneless steaks have little fat to protect them, so a minute too long shows. Use a thermometer and stop at 70 °C, and do not skip the short rest.
- The marinade burns on the outside
- Honey and soy sauce caramelise fast. Let most of the marinade drip off before cooking and use 190 °C rather than a higher setting.
- The steaks curl up in the basket
- Snip any rim of fat or membrane in two or three places before cooking so it cannot pull the meat out of shape.
Frequently asked questions
How long do pork steaks take in an air fryer?
Boneless steaks 1.5 cm thick take about 10 minutes at 190 °C, turned halfway. Thicker steaks of 2 cm need 12–14 minutes at 180 °C. Always check the centre with a thermometer.
What temperature should pork steaks be cooked to?
The Food Standards Agency says pork must be cooked through with no pink meat and clear juices. 70 °C in the thickest part is a safe, juicy point, followed by a few minutes of rest.
Can you cook pork steaks from frozen in an air fryer?
Yes, but they cook more evenly if you defrost them first. From frozen, use 180 °C for 16–18 minutes, turning twice, and check that the centre has reached 70 °C.
Do pork steaks need to be marinated?
No, a rub of oil, salt and spices is enough. A short marinade does add flavour and helps lean steaks stay tender, and even 20 minutes makes a difference.
Are pork steaks the same as pork chops?
Not quite. Steaks are usually boneless slices from the leg or shoulder, while chops come from the loin and often have a bone and a strip of fat.
