Potato Croquettes in the Air Fryer

Potato croquettes are meant to be crunchy on the outside and creamy in the middle, but oven-baked ones often turn dry and pale. Potato croquettes in the air fryer come out golden and evenly crisp in 12–14 minutes from frozen, with no deep-frying. This page covers frozen, chilled and fresh packets first, then a homemade version.

Why the air fryer works for potato croquettes

Potato croquettes air fryer style are crisp because the fast hot air dries the breadcrumb coating before the filling can melt and push through. Deep-frying does this with oil, but the air fryer manages it with a light mist, so you get the crunch without a pan of fat. The mashed centre stays creamy because the crumb forms a shell that holds in the steam.

It is also convenient. Frozen croquettes take 12–14 minutes with no thawing, there is no oven to preheat and the basket is easy to clean. The only caveat is capacity, because a 4–6 litre basket holds around 12–16 in one layer, so a large family may need two batches.

Tips

  • Cook from frozen. The crumb sets as the ice melts. Thawed croquettes are soft and more likely to burst.
  • Handle them gently. Turn with tongs, and shake the basket only once. The shell is fragile until it is browned.
  • Read the pack. Chilled croquettes are often raw and take 8–10 minutes at a lower temperature. Frozen ones are usually pre-fried and need the higher heat.

Homemade croquettes

Mash 600 g boiled floury potatoes without milk, add a tablespoon of butter, a pinch of nutmeg, salt and pepper, and let it cool completely. Shape into 12 short logs, roll in 3 tbsp plain flour, beaten egg and 80 g fine breadcrumbs. Chill them for 30 minutes so they hold their shape. Spray with oil and cook at 190 °C for 12–14 minutes, turning halfway. Mash that is too soft is the main cause of splitting, so add a little grated cheddar or a spoonful of flour if it feels loose. Ham croquettes need to be steaming hot all the way through (75 °C).

Serving

Potato croquettes in air fryer batches are a good side with roast chicken, sausages or fish fingers, or served with a dip as a snack. They also suit a Sunday roast in place of roast pork, and a green salad or green beans cuts the richness. For a firmer, crisper potato side, try potato wedges.

Storing and reheating

Cooked croquettes keep for 1–2 days in the fridge. Reheat them in the air fryer at 180 °C for 4–5 minutes until crisp and steaming hot all the way through (75 °C). Uncooked homemade croquettes freeze well on a tray, then in a bag, for up to 1 month. Cook them from frozen, adding 2–3 minutes.

Variations

  • Cheesy croquettes: Press a cube of cheddar into the centre of each homemade croquette before coating.
  • Sweet potato croquettes: Use mashed sweet potato for a sweeter, softer centre, and cook at 180 °C for 12 minutes.
  • Herb croquettes: Mix chives and parsley into the mash for a fresher flavour.

Troubleshooting

The croquettes burst open
The basket was not hot enough or the croquettes were thawed. Preheat, cook from frozen and handle them as little as possible during cooking.
The coating is pale and patchy
The basket was crowded. Cook in a single layer, mist lightly with oil, and add 1–2 minutes at the end for extra colour.
The middle is cold while the outside is dark
The temperature was too high for large croquettes. Drop to 180 °C and cook for 15–16 minutes instead.
