Scampi in the Air Fryer

Breaded scampi from the freezer is a quick pub-style meal, but the oven takes 20 minutes and the crumb often goes soft. Frozen scampi in air fryer baskets turns crisp and golden in 8–10 minutes, with no thawing and no oil. Here are the timings, plus a note on how to tell when it is hot all the way through.

Why the air fryer works for scampi

Frozen scampi in air fryer baskets is one of the easiest uses of the machine. The breadcrumb coating needs dry heat to crisp up, and the oven, which heats slowly and unevenly, often leaves it pale. The air fryer moves very hot air around every piece, so the crumb sets golden in 8–10 minutes and the scampi inside is hot and tender.

Scampi is delicate seafood, so it overcooks quickly and turns rubbery. A short cook at 180 °C, not higher, gives a crisp outside without drying the inside. Pack sizes vary, so use the pack time as a guide and check one piece. For prawns that are not breaded, see prawns in the air fryer, and for other frozen seafood, frozen fish.

How to cook frozen scampi in the air fryer

Tap a time to start a timer.

  1. Check the pack Look at the cooking instructions and take the oven temperature as a guide. Do not thaw the scampi; frozen crumb stays attached better.
  2. Preheat Preheat the air fryer to 180 °C for .
  3. Fill the basket Spread the scampi in a single layer with a little space between the pieces. No oil is needed because the crumb already contains fat. If you have more than 300 g, cook in two batches.
  4. Cook Cook for , shaking the basket or turning the pieces after , until deep golden.
  5. Check Break one open. The Food Standards Agency says ready-to-heat food must be steaming hot all the way through, so look for 75 °C in the centre. If it is still cool, cook for 1–2 more minutes.
  6. Serve Serve at once with tartare sauce, lemon and peas.

Tips

  • Keep them in one layer. Pieces that overlap steam each other and the crumb goes soft.
  • Shake gently. The crumb is fragile, so a light shake or turning with tongs works better than stirring.
  • Do not overcook. An extra 2–3 minutes dries the scampi inside, so check after 8 minutes.

Serving

The classic way is with chips, peas and tartare sauce, which also works with potato wedges or sweet potato fries. Scampi bites make a good starter or snack with a sweet chilli or garlic mayonnaise dip, and you can cook the chips first, then the scampi in 9 minutes, so everything comes out hot.

Storing and reheating

Cooked scampi is best eaten straight away, but it keeps for 1 day in the fridge. Reheat it in the air fryer at 160 °C for 3–4 minutes until it is steaming hot all the way through (75 °C). Do not refreeze scampi that has already been frozen and cooked.

Variations

  • Garlic and lemon dip: Mix 3 tbsp mayonnaise with a crushed garlic clove, lemon zest and chopped parsley.
  • Scampi in a bun: Pile the cooked pieces into a toasted roll with lettuce and tartare sauce.
  • Spicy: Sprinkle a pinch of smoked paprika or cayenne over the scampi when it comes out of the basket.

Troubleshooting

The crumb is soft, not crisp
The basket was too full or the scampi was thawed. Cook from frozen in a single layer and shake halfway.
The scampi is dark outside but cool inside
The heat was too high. Cook at 180 °C and check the pack for the correct size; large pieces need 2 more minutes.
The coating sticks to the basket
Brush the basket with a little oil, or cook on a perforated liner.

Frequently asked questions

How long does frozen scampi take in an air fryer?

Most breaded scampi needs 8–10 minutes at 180 °C, shaken halfway. Larger whole-tail pieces may need 10–12 minutes.

Can you cook scampi in an air fryer without thawing?

Yes, and it is better that way. Thawed breaded scampi turns soggy and the crumb comes off. Cook it straight from frozen.

Do you need oil for scampi in the air fryer?

No. Shop-bought breaded scampi already contains oil, so a dry basket is enough.

How do you reheat scampi in an air fryer?

Heat cooked scampi at 160 °C for 3–4 minutes until steaming hot all the way through (75 °C). Eat within a day of cooking.
