Why the air fryer works for sea bass
Sea bass in air fryer baskets suits a fish with a thin fillet and a skin worth eating. In a frying pan, you have to turn the fillet and risk breaking it; in the oven the skin rarely crisps. The air fryer blows hot air straight across the skin side, so it turns crisp and golden in about 7 minutes while the flesh underneath cooks gently and stays moist.
Sea bass has a mild, slightly sweet flavour, so simple seasoning works best: salt, thyme, garlic and lemon. A few things need care. The fillets are thin and cook quickly, so a minute too long dries them out. The skin must be dry before cooking. A whole fish needs a big basket, around 5–6 litres. For other white fish, see cod and frozen fish.

- Dry the skin Pat the fillets very dry with kitchen roll, especially the skin. Run a knife across the skin in 3 shallow slashes so it does not curl.
- Season Rub the skin with the olive oil and sprinkle with the salt and pepper. Tuck the garlic slices and thyme on the flesh side.
- Preheat Preheat the air fryer to 200 °C for . Brush the basket with a little oil so the delicate skin does not stick, or use a perforated liner.
- Cook Place the fillets skin side up in the basket, with a gap between them. Cook for . There is no need to turn them. The skin should be golden and crisp, and the flesh opaque.
- Check Push a thermometer into the thickest part. The fish is cooked at about 60 °C, which is common kitchen practice for white fish, and the flesh should flake easily. Add the butter and a squeeze of lemon and serve straight away.

Tips
- Buy fillets of equal size. Then both finish together. Put thinner ones in the cooler corner of the basket.
- Do not move the fish. Let the skin set for the first 5 minutes before you touch it.
- Rest briefly. Two minutes lets the heat spread so the middle finishes without overcooking the edges.
Serving
Serve the fillets with new potatoes and asparagus, or on a bed of wilted spinach with a squeeze of lemon. Air fryer sea bass fillets also go well with a quick caper and butter sauce made in a small pan while the fish cooks.
Storing and reheating
Cooked sea bass keeps for 1 day in the fridge in an airtight container. Reheat it in the air fryer at 160 °C for 3–4 minutes, until steaming hot all the way through (75 °C), or flake it cold into a salad. It does not freeze well once cooked.
Variations
- Miso glaze: Brush the flesh side with 1 tbsp white miso mixed with 1 tsp honey for the last 3 minutes.
- Whole fish: Stuff the cavity with lemon slices and herbs, slash the sides 3 times and cook at 180 °C for 15–18 minutes.
- Chilli and lime: Rub with a little chopped red chilli and lime zest before cooking for a spicier fish.
Troubleshooting
- The skin is soggy
- The skin was wet or the fillets were cooked skin down. Pat it very dry, rub with oil and cook skin side up so the hot air reaches it.
- The fillets curl up
- The skin shrinks faster than the flesh. Make 3 shallow slashes across it and press the fillet flat for the first 20 seconds with a spatula.
- The fish is dry
- Thin fillets cook very fast. Start checking at 6 minutes, and take them out as soon as they flake.
Frequently asked questions
How long does sea bass take in an air fryer?
Fillets of about 120 g take 6–8 minutes at 200 °C. A whole 400–500 g fish takes 15–18 minutes at 180 °C, turned once.
