Stuffed Chicken Breast in the Air Fryer

Stuffed chicken breast looks impressive but is easy to get wrong, because the filling slows the heat and the lean meat dries out around it. The air fryer cooks the outside quickly and evenly, so the chicken stays tender while the cheesy filling melts. You can have four breasts filled with spinach and cream cheese on the table in about 22 minutes of cooking.

Why the air fryer works for stuffed chicken breast

Stuffed chicken breast in air fryer baskets cooks more evenly than in a frying pan, where the outside browns long before the filling is hot. The circulating hot air surrounds the whole breast, so the outside colours while the heat travels towards the middle. At 180 °C the breast cooks through without drying, and the cream cheese filling melts into a soft centre.

A stuffed breast is thicker than a plain one, so allow more time than for an ordinary fillet. About 22 minutes is right for 170 g breasts. The usual chicken breast timings are in chicken breast in the air fryer; this page covers the extra time the filling needs. A small air fryer will take two at a time, so cook in two batches.

How to make stuffed chicken breast in the air fryer

  2. Cut the pockets Lay a chicken breast flat and cut a deep pocket into the thickest side with a small, sharp knife, leaving the other three edges closed. Fill each pocket with a quarter of the mixture, without overfilling.
  3. Close and season Seal each opening with two cocktail sticks. Rub the breasts with oil and season with the paprika, salt and pepper.

Tips

  • Cut the pocket carefully. Keep the knife angled so the pocket is wide inside but the opening is narrow. This holds the filling in and gives you more room for it.
  • Use a dry filling. Wet vegetables make the filling runny. Squeeze spinach well, and drain any sundried tomatoes or roasted peppers on kitchen roll.
  • Rest before slicing. Five minutes lets the hot cheese firm up slightly, so it stays in the breast instead of running out on the plate.

Serving

Slice the breasts on the diagonal to show the filling and serve with potato wedges, green beans or a simple salad. Roasted asparagus goes well with the creamy spinach. A stuffed chicken breast in air fryer batches suits a dinner for two just as well as a family meal, as the filling can be made the day before.

Storing and reheating

Keep cooked stuffed chicken in an airtight container in the fridge for up to 2 days. Reheat at 160 °C for 8–10 minutes in the air fryer, until steaming hot all the way through (75 °C in the centre, including the filling). Do not reheat more than once.

Variations

  • Ham and cheese: Fill each pocket with a slice of ham and 30 g of grated cheddar or Swiss-style cheese for a cordon bleu style breast.
  • Pesto and mozzarella: Use 2 tbsp pesto and a few slices of mozzarella and tomato in each pocket, for a fresh, Italian-style filling.
  • Bacon-wrapped: Wrap each filled breast in 2 slices of streaky bacon, tucking the ends underneath, and cook for 3–4 minutes longer. See bacon in the air fryer for more on cooking bacon.

Troubleshooting

The filling leaks out
The pocket was overfilled or not closed. Fill it with no more than a quarter of the mixture, squeeze out wet ingredients like spinach, and use two cocktail sticks per breast.
The outside is dry but the middle is not hot
The breasts were very thick. Flatten the thickest end slightly before cutting the pocket, or cook at 170 °C for 25 minutes, and always check with a thermometer.
The cocktail sticks burn
Soak them in water for 10 minutes before use, or use a thin string tied around the breast instead.
